Luckily, everyone in your family will love this delicious gluten free chocolate Christmas cookie recipe!
In addition to being packed with holiday flavor, these cookies are so easy to make! You can have a batch of delicious Christmas cookies ready in under 30 minutes! That’s why they’re one of my favorite gluten free cookies.

Gluten Free Chocolate Christmas Cookies
To make this easy gluten free chocolate Christmas cookies, you’ll need just a few simple ingredients — the most important being chocolate. This simple recipe incorporates three different kinds of chocolate to ensure it’s packed with flavor.

To make these easy gluten free chocolate peppermint cookies, you’ll need:
- Gluten free baking flour (I love Bob’s Red Mill 1-to-1 Baking Flour)
- Unsweetened cocoa powder
- Cornstarch
- Salt
- Baking powder
- Baking soda
- Butter
- Sugar
- Peppermint extract
- Eggs
- Dark chocolate chips
- Ghirardelli peppermint bark
The first step to making your gluten free peppermint cookies is to mix together the dry ingredients. Add your gluten free baking flour, cornstarch, baking soda, baking powder, and salt to a medium bowl. Whisk all the ingredients together until they’re well combined, then set the bowl aside.

Next, place your softened butter and sugar in a large bowl. Beat the ingredients together until they’re light and creamy. To ensure your butter is room temperature when you’re making your cookies, try to set the stick of butter on the counter around 30 minutes before you start baking. That way, it will be ready to mix when you’re ready to make your Christmas cookies!

After creaming your butter, add the peppermint extract and one egg to the bowl. Mix until those ingredients are well combined. Then, add your second egg and beat until that egg is mixed well into the batter.

Next, add the flour mixture to your batter and beat until a thick dough forms. The batter will be pretty thick at this point, so if your hand mixer is having issues mixing the dough together, just grab a spoon and start stirring.

When all the ingredients are mixed, add your dark chocolate chips and peppermint bark to the bowl. Stir to mix those add-ins into the batter.

To make your cookies, use a tablespoon to scoop the dough out of the bowl. Roll the dough into a ball and place it on the parchment paper lined baking sheet. Use your fingers to press down the ball slightly, then top the cookie with a pinch of extra chopped peppermint bark. This will add some more peppermint flavor to each cook and decorate the top of your chocolate Christmas cookies, too!

You’ll know the cookies are ready to come out of the oven when the edges are firm but the center is still slightly soft. When the cookies are done baking, allow them to cool on the baking sheet for around five minutes to give the center of the cookies time to finish baking. Then, transfer to cookies to a wire cooling rack to finish cooling. Make sure your cookies are cooled completely before adding enjoying them — if you can wait that long!.

Gluten Free Chocolate Peppermint Cookies
These delicious chocolate peppermint cookies are packed with holiday flavor, making them the perfect gluten free chocolate Christmas cookies!
Ingredients
- 2 ½ cups gluten free baking flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon cornstarch
- ½ teaspoon salt
- ¼ teaspoon baking soda
- 1 cup butter, softened
- 1 ¼ cups sugar
- ½ teaspoon peppermint extract
- 2 eggs
- ½ cup dark chocolate chips
- ½ cup chopped Ghirardelli peppermint bark, chopped
- Additional chopped peppermint bark for topping, if desired
Instructions
- Preheat the oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, cornstarch, salt, and baking soda. Set aside.
- In a separate bowl, beat the butter and sugar until smooth and creamy.
- Add the peppermint extract and eggs, one at a time, beating between each addition.
- Pour in the dry ingredients and mix until well combined.
- Fold in the dark chocolate chips and peppermint bark and stir to combine.
- Use a tablespoon to scoop out dough and roll each scoop into a ball. Place on the baking sheet and press down slightly. Top with additional chopped peppermint bark if desired.
- Bake the cookies in the preheated oven for 10 to 12 minutes, until the edges are firm but the center is still soft. Allow the cookies to cool on the baking sheet for five minutes, then transfer to a wire cooling rack to cool completely before serving.
