To make these easy gluten free cut out cookies, you’ll need just a few simple ingredients — the most important being cream cheese. That’s the secret ingredients that puts this gluten free cookie recipe over the top!

To make these easy gluten free sugar cookies, you’ll need:
- Gluten free baking flour (I love Bob’s Red Mill 1-to-1 Baking Flour)
- Baking soda
- Salt
- Baking powder
- Butter
- Cream cheese
- Sugar
- Vanilla extract
- Egg
- Icing
The first step to making your gluten free cut out sugar cookies is to mix together the dry ingredients. Add your gluten free baking flour, baking soda, baking powder, and salt in a large bowl. Whisk the ingredients together until they’re well combined, then set the bowl aside for a few minutes while you prepare the rest of your cookie dough.

Recipe for Gluten Free Sugar Cookies

Next, grab your softened butter and sugar. Use a stand mixer to beat the ingredients together until they’re light and creamy. The best way to get the right consistency when creaming your butter and sugar is to make sure to use room temperature butter. Just set the stick of butter on the counter around 30 minutes before you start baking and it will be ready to cream when you’re ready to make your cookies! Or you can soften your butter in the microwave — just be careful not to overheat the butter and melt it.
It’s a good idea to use a stand mixer when making these gluten free cookies. The dough will end up very thick, which may be difficult to mix when using a hand mixer or mixing by hand.

Add the egg and cream cheese to the butter mixture. Beat the ingredients to combine them until they’re well mixed. To make sure your cream cheese incorporates fully into the dough, it’s best to use room temperature cream cheese. Just set out the cream cheese with your butter around an hour before you’re ready to bake to make sure it’s soft when you mix it into your cookie dough.

Next, grab the bowl with your dry ingredients and add the flour mixture to the butter mixture. Beat all the ingredients together until you get a thick sugar cookie dough.

To make the dough ready for cutting with cookie cutters, you’ll need to chill it first. Separate the dough into two equal balls, then place each dough ball in a zip-top gallon bag. Press the dough down into a disk and chill it in the refrigerator for at least one hour. You can keep the dough in the fridge for up to a week. But if you don’t think you’ll need all the dough, you can also freeze your sugar cookie dough.

After the dough has chilled, you can use your cookie cutters to cut it into shapes. Lightly flour your work surface, then use a rolling pin to roll the dough until it’s around 1/4 inch thick. Cut out the dough with your cookie cutters and place them on a lined baking sheet. Continue rolling and cutting until all the dough has been used.
Bake the cookies in th preheated oven for 8 to 10 minutes, until the edges are just beginning to brown. Allow the cookies to cool on the baking sheet for five minutes, then transfer the cookies to a wire cooling rack to cool completely. When the cookies are cool, you can ice them with your favorite frosting recipe.

Traditional sugar cookies are not gluten free, but you can make a few substitutions in your recipe to make your own gluten free sugar cookies. The most important replacement is the flour. I always use Bob’s Red Mill 1-to-1 Baking Flour when baking cookies and other gluten free desserts.
Do you have tips for rolling the dough?
I do! Rolling out gluten free dough can sometimes be a little difficult. The first step to rolling out your dough is to make sure you’re working on a floured surface and flouring your rolling pin to keep the dough from sticking. Then, start in the middle and roll outward toward the edge of the dough to help prevent cracking. If your dough cracks, don’t try to repair it. Just cut around the crack with your cookie cutters, then re-roll the dough.
Do I have to roll out the dough and use cookie cutters?
No. You can make drop cookies with this dough, too. When making drop sugar cookies, skip the chilling step and go directly to baking the cookie dough. Scoop out the dough and roll it into a ball. Place the ball on the lined baking sheet and press it down slightly with your fingers. Bake the cookies in the preheated oven for 10 to 12 minutes, until the bottom of the cookies is golden brown but the top of the cookies are still slightly soft.

Ingredients
- 3 ½ cups gluten free baking flour
- ¼ teaspoon baking soda
- ¾ teaspoon salt
- 1 ½ teaspoon baking powder
- 1 cup (2 sticks) butter, room temperature
- 2 ounces cream cheese, softened
- 1 ¼ cups sugar
- 1 teaspoon vanilla extract
- 1 egg
- Icing for topping
Instructions
- In a medium bowl, whisk together the gluten free flour, baking soda, salt, and baking powder.
- In a separate bowl, beat together the butter, cream cheese, and sugar. Add the vanilla extract and egg and beat until combined.
- Mix in the flour mixture at low speed until dough begins to form.
- Separate the dough into two equal balls and place each in a plastic bag. Press the dough into a disk and chill for at least one hour.
- When ready to bake, preheat oven to 375 degrees and line a baking sheet with parchment paper.
- Roll out the dough on a lightly floured surface until the dough is around ¼ inch thick. Use cookie cutters to cut out shapes and place them on the prepared baking sheet.
- Bake the cookies for 8 to 10 minutes, until the cookies are golden brown on the edges.
- Allow to cool on the pan for five minutes, then transfer them to a wire cooling rack to cool completely.
- When the cookies are cool, ice with your favorite icing and serve.
