The delicious combo of mint and chocolate goes perfectly with the soft and chewy cookie dough, making this yummy treat is one of the best gluten free Christmas cookies!

The combination of chocolate chips and Andes mints means these delicious gluten free Andes mint cookies are full of flavor. But just because they’re flavorful doesn’t mean they’re hard to make! You can have these easy cookies made and ready to eat in less than an hour — and most of that time is spent waiting for the cookies to cool!

This easy recipe for gluten free mint cookies uses just a handful of common ingredients! You don’t have to make your own gluten free flour blend or use any complicated ingredients to make this delicious gluten free cookies.

Gluten Free Mint Chocolate Chip Cookies

To make these easy gluten free Andes mint chocolate chip cookies, you’ll need just a few simple ingredients — the most important being Andes mints. You can use Andes mint bits for your cookies or chop up a few Andies bars to create the chocolate mints for your cookies.

To make these easy gluten free Andes cookies, you’ll need:

  • Gluten free baking flour (I love Bob’s Red Mill 1-to-1 Baking Flour)
  • Baking soda
  • Cornstarch
  • Salt
  • Butter
  • Brown sugar
  • White sugar
  • Egg
  • Chocolate chips
  • Andes mint bits
  • Green food coloring (optional)

The first step to making your mint chocolate chip cookies is to mix together the dry ingredients. Add your gluten free baking flour, baking soda, cornstarch, and salt in a large bowl. Whisk the ingredients together until they’re well combined, then set the bowl aside for a few minutes while you prepare the rest of your cookie dough.

Next, grab your softened butter, white sugar, and brown sugar. Use a hand mixer to beat the ingredients together until they’re light and creamy. The best way to get the right consistency when creaming your butter and sugar is to make sure to use room temperature butter. Just set the stick of butter on the counter around 30 minutes before you start baking and it will be ready to cream when you’re ready to make your cookies! Or you can soften your butter in the microwave — just be careful not to overheat the butter and melt it.

Add the egg to the butter and sugar mixture and beat the ingredients to combine them until they’re well mixed. If you want your cookies to be green, add a couple of drops of green gel food coloring to the batter and beat until well combined.

Next, grab the bowl with your dry ingredients and add the flour mixture to the butter mixture. Beat all the ingredients together until you get a smooth, creamy batter.

Finally, add your crushed Andes mints and chocolate chips to the batter and fold them in until they’re well combined. There are a few different types of mints you can use in your mint cookies:

  • Andes mint bits: These handy baking bits are perfect for your mint chocolate chip cookies. They’re usually found in the baking aisle with the chocolate chips. And they’re already chopped up and ready to go, making it super easy to add them to your cookie dough.
  • Crushed Andes mints: If you can’t find Andes mint bits in your store, you can make your own! Simply grab a few Andes bars and chop them up with a sharp knife, then add them to the dough.
  • Mint chips: Another option is to use plain mint chips in your cookies. You can find mint chips in the baking aisle of most grocery stores — they look like green chocolate chips. But if you plan to use plain mint bits, I suggest increasing the number of chocolate chips in the recipe. Since I used Andes bits, which also include chocolate, your cookies will have less chocolate in them if you use plain mint bits.

After mixing in the mint bits and chocolate it’s time to start forming your cookies! Use a tablespoon to scoop out the dough, then roll the ball between your fingers. Place each ball of dough on a parchment paper lined baking sheet, around two inches apart. Press the dough balls down slightly with your hand, then top with additional chopped Andes mints, if desired.

Bake the cookies in the preheated oven for 10 to 12 minutes. You’ll know the cookies are done when the edges are just starting to brown and the tops are still soft. Remove the baked cookies from the oven and allow them to cool on the baking sheet for around five minutes, then transfer them to a wire cooling rack to cool completely.

Are Andes mints gluten free?

Yes! Andes mint candies are gluten free, which makes them the perfect addition to your cookie batter when you’re baking gluten free cookies.

Can I use peppermint instead?

If you prefer the flavor of peppermint instead of Andes mints, you can definitely replace the Andes with peppermint. Try chopping up some Ghirardelli peppermint candy to add to your cookies in place of the Andes mints to make gluten free peppermint chocolate chip cookies. I bet that would be delicious!

Ingredients

  • 1 ½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • ¼ teaspoon salt
  • ½ cup (one stick) butter, room temperature
  • ¼ cup brown sugar
  • ½ cup sugar
  • 1 egg
  • 1 cup Andes mints, finely chopped
  • ½ cup mini chocolate chips
  • Green food coloring

Instructions

Preheat oven to 350 degrees and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, cornstarch, and salt. Set aside.

In a separate bowl, beat together the butter, brown sugar, and sugar until light and fluffy.

Add the egg and green food coloring. Beat until combined.

Pour in the flour mixture and mix until well combined.

Fold in the Andes mints and mini chocolate chips, reserving a small amount of candy for topping the cookies if desired.

Use a tablespoon to scoop out the dough and roll it into a ball. Place the balls on the lined cookie sheet, leaving around two inches between each cookie.

Press the cookies down slightly with your hand, then top the cookies with reserved candy, pressing the candy into the cookie dough slightly.

Bake in the preheated oven for 8 to 10 minutes, until the edges of the cookies are beginning to brown and the center is still soft.

Remove from oven and allow to cool on the cookie sheet for five minutes, then transfer to a wire cooling rack to cool completely before serving.
