Add the milk, cocoa powder, and one cup of powdered sugar to the bowl. Beat the ingredients on low until they’re combined, making sure to mix slowly to keep the powdered sugar and cocoa powder from flying up out of the bowl.

Set your mixer aside and add the remaining powdered sugar one cup at a time. Use your hands to knead the powdered sugar into the chocolate dough, making sure the sugar is fully incorporated into the dough before adding more.

Use a tablespoon or cookie scoop to scoop out the dough and roll it into a ball. Roll the dough ball in the sugar mixture until all sides are completely coated.

Place the dough balls on a lined baking sheet and chill the dough in the refrigerator for at least 30 minutes. This will allow the cream cheese to stiffen, turning the soft dough balls into cookies.

After the cookies have chilled, remove the pan from the refrigerator. Use a fork to press down the top of each cookie dough ball.

Press the fork down on the top of the cookie in one direction, then lift up the fork and turn it 90 degrees, and press down again to create a grid pattern on the top of the cookie.

Allow the cookies to rest at room temperature for at least 30 minutes to harden before serving.

Chocolate Cream Cheese Mints

These easy no bake cookies are a classic Christmas treat that are naturally gluten free! As you prepare these delicious cookies, try these recipe ideas and tips.

  • Try mint extract. Peppermint extract has a very strong flavor. If you want your mint cookies to have a lighter mint flavor, try using mint extract instead. Mint extract contains a spearmint flavor, making it a good choice for adding a lighter mint flavoring to your chocolate cookies.
  • Make smaller mints. This recipe allows you to make cookie-sized mints, but you can also make smaller bite-sized mints using the same dough. Instead of using a tablespoon to scoop the dough, use a teaspoon. The smaller spoon will create mini-cookies, perfect for bite-sized mint treats.
  • Store at room temperature. After your cream cheese mints have hardened, you can transfer them to an airtight container. The mint cookies can be stored at room temperature or in the refrigerator for up to one week.
  • Keep in the freezer for longer storage. Your chocolate mint cookies can also be frozen for up to one year. Place the cookies in an airtight container or freezer bag and store in the freezer for 10 to 12 months. When you’re ready to eat the cookies, just let them thaw at room temperature.
  • Use silicone molds. To create shaped chocolate mints, try using silicone molds. Press the dough into the mold and chill it. After the dough becomes solid, pop it out of the mold and allow the cookies to come to room temperature.
