The first step to making these yummy cakes is to mix together gluten free chocolate cake mix and chocolate pudding mix in a large bowl. Just whisk the two ingredients together until they’re combined.

Next, mix together your last three ingredients — eggs, sour cream, and peppermint extract. Depending on your gluten free cake mix, you may need to add a little extra moisture into your batter. When making this recipe with traditional cake mix, you only need one egg. But the dryness of the gluten free ingredients means you’ll probably need to add an extra egg to the mix.
Whisk these three ingredients together until they’re well combined, then pour the mixture into your dry ingredients. Use a spoon to stir all the ingredients together.

I know I said you’d only need five ingredients to make this cake. And we’ve already used five ingredients, right? Well, the beauty of this simple recipe is that you can customize it. While you could stop at the instructions above and have a delicious five-ingredient peppermint chocolate cake, I’m all about making my recipes amazing. And that means tossing in a few more ingredients — like chocolate chips. Fold the mini chocolate chips into the batter until they’re even spread out.

Spoon the batter into your greased mini bundt cake pan. The batter will be thick, so using a spoon to fill each cake cup is the best method.
Note: you could also use a traditional bundt cake pan to make your chocolate peppermint cake, but you’ll need to increase the baking time!

How do I make a full-size bundt cake?
You can easy make this recipe into a full-size bundt cake simply by increasing the baking time. Follow the recipe as-is, but double the bake time. Check the cake at around 45 minutes check the doneness and continue cooking until a toothpick inserted into the center of the cake comes out clean.
Gluten Free Chocolate Peppermint Cake
This delicious recipe for gluten free chocolate peppermint cake is an easy way to enjoy all the flavors of the holidays in one simple dessert.
Ingredients
- 2 eggs
- 1 16-ounce carton sour cream
- 1 teaspoon peppermint extract
- 1 box gluten free chocolate cake mix
- 1 4-ounce package instant pudding mix
- 1 ½ cups mini chocolate chips (plus more for topping, optional)
- 1 container chocolate frosting for topping (optional)
- 10 peppermint candies, crushed (optional)
Instructions
- Preheat oven to 325 degrees and prepare a mini Bundt pan by greasing with nonstick cooking spray.
- In a large bowl, beat to together the egg, sour cream and peppermint extract.
- Add the cake mix and instant pudding mix and stir to combine. Batter will be thick.
- Fold in the mini chocolate chips.
- Spoon the batter into the mini Bundt pan and fill each cup halfway full.
- Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow cake to cool in pan for 30 minutes, then flip pan over onto a wire cooling rack and allow the cakes to cool completely.
- To make the chocolate glaze, heat one container of chocolate frosting in the microwave for 30 seconds. Stir to mix, then spoon the frosting over the top of the cakes. Garnish with additional mini chocolate chips and crushed peppermint candy if desired.
Notes
If using traditional (not gluten free) cake mix, only use one egg!
