You all know how much I love easy recipes. And this recipe is just about as easy as they come! But these brownie mix cookies taste so good, no one will know you used a boxed mix to make them.
To make these yummy cookies, you’ll need to start with a gluten free brownie mix. I used a Pillsbury brownie mix and they turned out great! But I’ve also made this recipe with Aldi’s chocolate baking mix, and they were just as delicious. You’ll also need some candy crumbles to add a little extra flavor and texture to the cookies. To make these, I used Heath toffee crumbles. But during the holidays, I love to make these gluten free Christmas cookies with chopped Andes mints — so good!!
Make Your Brownie Mix Cookies
To make these brownie mix cookies, you’ll need to start with your favorite gluten free brownie mix. Pour the mix into the bowl and disregard the directions on the package. This brownie mix hack uses melted butter, eggs, and coffee instead of the traditional brownie ingredients.
Customize Your Recipe
After adding in the wet ingredients, it’s time to add your candy bits. There are so many different ways you can make these gluten free brownie mix cookies! Here are a few other fun ideas to customize your recipe:

After you’ve picked the perfect candy for your cookies, add it in along with some chocolate chips and mix everything together. The batter will be thick, so I recommend using a spoon to stir instead of a hand mixer.
Scoop the batter onto a parchment paper lined baking sheet. Make sure you give the cookies plenty of room to spread! They flatten as they cook, so you’ll need to allow space between each cookie on your baking sheet. Bake the cookies for 12 to 14 minutes. After pulling the cookies out of the oven, I sprinkled a little extra toffee bits on top of each cookie to make them look even more delicious. If you plan to add some decorative candy on top of your cookies, be sure to do it while the cookies are still warm!
After the cookies have cooled for a few minutes on the baking sheet, remove them to a wire rack to cool completely. Or eat them warm if you can’t wait to try one! They’re delicious either way!
Gluten Free Brownie Mix Cookies
Make your own soft and chewy gluten free chocolate cookies with a brownie mix! This recipe for brownie mix cookies is a simple way to enjoy a batch of cookies without making them from scratch.
Ingredients
- 1 box gluten free brownie mix
- ¼ cup melted butter
- 2 eggs
- 2 tablespoons coffee
- ½ cup chocolate chips
- ½ cup toffee bits
Instructions
- Preheat oven to 325 degrees.
- Mix the brownie mix, melted butter, eggs, coffee, chocolate chips, and toffee bits together in a large bowl.
- Scoop a tablespoon of batter onto a parchment paper-lined baking sheet. Spread cookies at least two inches apart on the baking sheet.
- Bake for 12 to 14 minutes. Cookies should be firm on the edges and soft in the center.
- Allow to cool on the baking sheet for at least five minutes before moving them to a wire cooling rack to cool completely.
