You’re going to love how quickly and easily these potato skin tacos come together. That’s because you only need a few ingredients to prepare them!

To make your own taco potatoes, you’ll need just a few ingredients, including:
- Large Yukon gold potatoes
- Vegetable oil
- Ground beef
- Onion
- Taco seasoning
- Diced tomatoes with green chilies
- Water
- Mexican blend cheese
How to Make Taco Potato Skins
Now that you have your ingredients gathered up and ready to go, it’s time to start cooking! Just follow these easy instructions for learning how to make baked potato skins at home.

The first step takes the longest — baking the potatoes. Start by brushing each potato on both sides with vegetable oil to help the skin get crispy as it bakes.
Then, place the potatoes on a parchment paper lined baking sheet and bake for around 1 hour, until they’re fork tender.

While the potatoes are baking, you can prepare your taco meat. Start by browning your ground beef with some finely chopped onions.

When the beef is cooked through, add the diced tomatoes with green chilis (I like to use Rotel), water, and taco seasoning to the pan. Stir to mix, then saute the ingredients over medium low heat until the sauce begins to reduce and thicken.
After that, you can remove the pan from heat and set it aside until the potatoes are finished cooking.

When the potatoes are done baking, remove them from the oven and allow them to cool for a few minutes until they’re safe to handle. Then, cut each potato in half lengthwise and scoop out the center of the potato. You can set the filling aside to use in another recipe.

You can leave the potatoes halved for larger servings. Or cut the potato skins in half again for smaller pieces.
If you prefer your potato skins to be crispy, I would suggest placing them back in the oven after they’ve been cut to help the skin get crispier. Bake them for an additional 15 to 20 minutes.

If you don’t mind a softer potato skin, you can add the cooked taco filling directly to the potatoes without baking them more. Fill each potato full of taco meat, lightly pressing it into the skin so it stays in place.

After that, sprinkle the cheese over the top of each potato, covering the filling completely. Then, place the pan in the oven to bake for 10 to 15 minutes, until the cheese on top is melted.

After that, you sprinkle some extra taco seasoning and chopped green onion on top before serving!

Ingredients
- 4 large russet potatoes
- 2 tablespoons vegetable oil
- 1 pound ground beef
- 1 small onion, finely chopped
- 1 packet taco seasoning
- 1/4 cup water
- 1 can diced tomatoes with green chilies
- 2 cups shredded fiesta blend cheese
- Chopped green onion for garnish
- Sour cream for dipping
Instructions
- Preheat the oven to 400 degrees.
- Line a baking sheet with parchment paper and poke holes in each potato with a fork. Brush each potato all over with vegetable oil.
- Bake the potatoes in the preheated oven for 1 hour, until tender.
- While the potatoes are cooking, brown the ground beef in a large skillet with the chopped onion.
- When the meat is cooked through, stir in the taco seasoning, water and diced tomatoes. Simmer for 10 minutes, until the sauce has thickened, then remove pan from heat.
- Remove the potatoes from the oven and slice each one in half. Scoop out the center of each potato, leaving a thin layer of potato above the skin.
- Cut each potato half in half again. For crispier potato skins, return the pan to the oven for 15 to 20 minutes.
- Top each potato with the prepared taco meat and shredded cheese.
- Return the pan to the oven to bake for 15 minutes, until the cheese is melted and the potato skins are crispy.
