How to Make Stuffed Mini Peppers

Start by cooking your ground beef in a large skillet. Add the onion to the pan with the beef and cook both ingredients together until the beef is cooked through and the onions are tender.

When the beef is cooked through, add the diced tomatoes with green chilis (I like to use Rotel), water, and taco seasoning to the pan. Stir to mix, then saute the ingredients over medium low heat until the sauce begins to reduce and thicken.

Now that your beef is seasoned, it’s time to add the cream cheese! Cube the cream cheese to help it cook a little more quickly, then stir it into the pan with the cooked meat and tomatoes. Continue stirring until the cream cheese is melted and well combined with the taco meat.

After your taco filling is ready to go, you can start stuffing your mini peppers. First, slice each pepper in half lengthwise and remove the seeds from inside the peper.

Then, scoop a spoonful of taco filling into each pepper. Use the back of your spoon to spread the filling evenly across the entire pepper.

These Stuffed mini peppers are a delicious appetizer with a Mexican flare. Great for taco night, parties, and snacking.

Ingredients

  • 12 mini bell peppers
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 1 packet taco seasoning
  • 1 10-ounce can diced tomatoes with green chilies
  • 1/3 cup water
  • 4 ounces cream cheese, cubed
  • 1 can refried beans, heated
  • 2 cups shredded Mexican blend cheese

Instructions

    1. Preheat oven to 400 degrees.Using a large skillet, brown the ground beef with the onion.
    2. When the meat is crumbled and cooked through, add the taco seasoning, tomatoes, and water. Stir to mix. Allow the ingredients to simmer for 5 to 10 minutes until the liquid has thickened and reduced.
    3. Add the cream cheese to the pan and stir to mix. Continue cooking until all the cream cheese is melted, stirring often.
    4. Slice each pepper in half lengthwise and remove the seeds.
    5. Spread the refried beans along the bottom of each pepper.
    6. Fill the pepper with the ground beef and cream cheese mixture.
    7. Top each of the peppers with shredded cheese.
    8. Place the peppers on a parchment paper lined baking sheet and bake for 15 minutes, until the peppers are beginning to soften and the cheese is melted.
