This simple recipe combines gluten free Oreos and no bake cheesecake to create a decadent sweet treat. That means it’s perfece for an afternoon snack or even a party.

But the best part about this simple recipe is how easy it is to make. And that means it has a super short ingredient list! To make this gluten free Oreo cheesecake bites recipe, you’ll need:
- Gluten free Oreos. The key to making this simple dessert is using gluten free Oreos! But they sometimes be difficult to find where I am because the never stay in stock on the grocery store shelves for very long. If you aren’t able to find Oreos in your store, try using Glutino chocolate sandwich cookies instead.
- Butter. To create the gluten free crust, you’ll need butter. I used unsalted butter, but you could probably substitute with salted butter to help balance out the sweetness of the cookies.
- Cream cheese. The key to getting creamy no bake cheesecake is using softened full-fat cream cheese. I wouldn’t recommend using reduced fat cheese in this recipe because you won’t get the right consistency in your filling.
- Sour cream. Adding sour cream to your cheesecake filling is a simple way to add some tang and balance the sweetness of the sugary ingredients.
- Powedered sugar. While many traditional cheesecake recipes use granulated sugar, powedered sugar is the best option for no-bake cheesecake. That’s because granulated sugar can get gritty when it’s not baked, which isn’t very appealing in a no-bake treat.
- Vanilla extract. It’s important to check the ingredient list of your vanilla extract to ensure that it’s gluten free. Some brands are made in plants that process gluten-containing ingredients, which means they aren’t safe to eat.
- Semi-sweet and white chocolate chips. To decoate yoru cheesecake bites, you’ll need to use semi-sweet chocolate chips for the outer shell and white chocolate chips for the topping.
In addition to the ingredients listed above, you’ll also need one handy supply to make these cheesecake bites — a silcone mold. I love these square molds because they’re the perfect size for these bite-sized treats.
Gluten Free Oreo Cheesecake Bites
Making this simple recipe couldn’t be easier. That’s because it’s made of three basic layers — the Oreo crust, the no bake cheesecake, and the chocolate coating.

The first step to preparing these cheesecake bites is to make the Oreo crust. For this part of the recipe, you’ll need crushed gluten free Oreos and butter. Combine the two ingredients in a medium bowl and stir them together until the crumbs begin to stick together.

Add a spoonful of the crust to each cup in the silcone mold, then use your fingers to press the crust into the bottom of the mold. Continue pressing until the crust becomes solid to the touch. Then, place the molds in the freezer to harden while you prepare the cheesecake filling.

To make the gluten free Oreo cheesecake filling, start by beating together the cream cheese, sour cream, vanilla extract, and powdered sugar together in a large bowl. Start mixing on low until the powdered sugar is mixed into the other ingredients. After that, you can turn the speed up to medium high and continue beating until the mixture is smooth and lump-free.

Once you have the cheesecake mixture prepared, add the remaining gluten free Oreo crumbs to the bowl and stir to mix them cookies into the cheesecake.

Remove the molds from the freezer and make sure the crust is frozen solid. Then, spoon or pipe the cheesecake mixture into the molds, filling each cup up to the top. After that, you can use a flat spatula to spread create an even layer on the top of each mini cheesecake.
Once you have all the cups filled with cheesecake filling, return the molds to the freezer and allow them to freeze solid. This will take at least one hour.

When the cheesecakes are frozen solid, you can start preparing your chocolate topping. Add the chocolate chips to a microwave safe bowl and heat on high in 30 second intervals. After each interval, remove the bowl and stir the chocolate. Continue cooking until all the chocolate is melted.
If it seems like your chocolate is too thick for dipping, add a teaspoon or two of coconut oil to the bowl and stir to mix it in. This will help thin the chocolate, making it easier to dip the Oreo cheesecakes.
Once your chocolate is ready to go, remove one of the silcone molds from the freezer and pop one of the mini cheesecakes out of mold. Dip the cheesecake in the chocolate, making sure to coat all sides. Then, remove the frozen cheesecake from the chocolate with a fork. Lightly tap the fork on the side of the bowl to help knock off any excess chocolate from the cheesecake, then transfer it to a piece of parchment or wax paper to cool.
Continue working in batches until all the cheesecakes are coated in chocolate. If the cheesecakes begin to thaw and soften, just put them back in the freezer to harden up before attempting to dip them in the chocolate.

After all the mini cheesecakes are coated in chocolate, allow the chocolate to cool and harden. You can store them in the refrigerator to speed up the cooling process.
Once all the chocolate has hardened, melt your white chocolate chips in 30 second intervals until they’re melted. Then, transfer the melted chocolate to a piping bag. Cut off the tip of the bag and drizzle the chocolate over the top of the cheesecakes.
After decorating the Oreo cheesecake bites, store them in the refrigerator until you’re ready to serve them.

- Skip the gluten free ingredients. If you don’t need the cheesecake bites to be gluten free, you can easily replace the gluten free Oreos with traditional Oreos, then prepare the recipe as written.
How Do You Soften Cream Cheese?
Using softened cream cheese is essential to getting a smooth and creamy no bake cheesecake filling. That means you’ll need to take the time to soften the cream cheese before adding it to the rest of the cheesecake ingredients.
There are two basic ways to soften cream cheese:
- Allow it to rest at room temperature. If you have extra time, allowing the cream cheese to soften at room temperature is the best option. Simply place the cream cheese package on the counter and let it sit at room temperature for at least one hour to soften.
- Warm it in the microwave. You can also soften the cream cheese in the microwave, but you run the risk of overheating or melting the cream cheese with this method. To soften the cheese in the microwave, place it in a microwave-safe bowl and cover the bowl with a paper towel to catch an splatter. Then, heat the cream cheese for 15 to 30 seconds, until it’s softened.
Gluten Free Oreo Cheesecake Bites
These no bake oreo cheesecake bites are the perfect gluten free sweet treat!
Ingredients
- 30 gluten free Oreo cookies, crushed
- 1/2 cup butter, melted
- 2 8-ounce packages cream cheese, softened
- 1/2 cup sour cream
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 3 cups chocolate chips
- 1/4 cup white chocolate chips
Instructions
- Stir together 1 1/2 cups of the crushed gluten free Oreos and the butter in a medium bowl.
- Press the crust mixture into the bottom of three square silicone trays. Place in the freezer and freeze until hardened, around 10 minutes.
- In a separate bowl, combine the cream cheese, sour cream, powdered sugar, and vanilla until well combined. Stir in the remaining crushed Oreos.
- Pipe the mixture over the top of the frozen crust and return the tray to the freezer. Freeze until solid, around 1 hour.
- Melt the chocolate chips in 30 second intervals until melted.
