How to Make Gluten Free Chocolate Chip Cookie Bars

When you’ve gathered all your gluten free ingredients, it’s time to get baking! Start by whisking together your flour, cornstarch, baking powder, and salt in a medium bowl. Set the dry ingredients aside and beat together the butter and sugars (both the brown sugar and white sugar) until they’re light and fluffy. Then, add the eggs and vanilla and beat until they’re well combined.

Next, add the dry ingredients to the butter mixture. Beat until the ingredients are well combined. The batter should be smooth and creamy, not thick like traditional chocolate chip cookie dough.

After you have your cookie bar batter ready, it’s time to add in the most important ingredient — the chocolate! For my gluten free chocolate chip cookie bars, I added semi-sweet chocolate chips to the batter.

After adding your chocolate chips to the batter, you can pour it into your baking pan. To make it easier to cut and serve the bars, I suggest adding a piece of parchment paper to the pan before pouring the batter in. I love these parchment paper sheets from Reynolds. They’re the perfect size for baking and you don’t have to cut them! Just lay the parchment paper sheet in the pan and pour the batter in. The sheet will form to the pan as you spread the batter around.

Now it’s time to add some fun colors to your gluten free cookie bars! Sprinkle a few M&Ms on top of the cookie bars before you add them into the oven. They make your bar cookies look amazing and add a little bit more chocolate to the dessert. Who doesn’t love more chocolate?!

Place the gluten free bar cookies in the oven and bake them for 30 to 35 minutes. You’ll know your cookie bars are done cooking when they’re golden brown and a toothpick inserted in the center of the bars comes out clean.

I know this next step is going to be difficult, but it’s best to allow your cookie bars to cool completely before you cut into them. These cookie bars are soft and gooey, which means they’ll probably fall apart if you try to cut into them while they’re still warm. But I promise these gluten free chocolate chip cookie bars are worth the wait!

  • M&Ms
  • Pretzels

Use different candy on top. M&Ms are a great addition to your gluten free chocolate chip cookie bars, but you don’t have to stick with plain M&Ms. Change things up by adding different flavors of M&Ms to the top. Or use Reese’s Pieces to add some peanut butter flavor to the cookie bars.

Ingredients

  • 1 ½ cups gluten free baking flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup brown sugar
  • ¼ cup sugar
  • 1 stick butter, melted
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup chocolate chips
  • ½ cup M&Ms

Instructions

  1. Preheat oven to 350 degrees and line an 8x8 pan with parchment paper.
  2. Combine the flour, cornstarch, baking powder, and salt in a medium bowl. Whisk to mix and set aside.
  3. In a large bowl, beat together the butter and sugars. Add the eggs and vanilla and beat to combine.
  4. Add the flour mixture to the butter mixture and beat to combine.
  5. Fold in the chocolate chips.
  6. Spread the batter into the prepared pan. Top with M&Ms.
  7. Bake in the preheated oven for 30 to 35 minutes, until the center of the cookie bars is set.
  8. Remove from oven and allow to cool to room temperature before slicing.
