Gluten Free Hot Chocolate Cookies

These delicious gluten free hot chocolate cookies are probably the perfect gluten free cookie! They’re filled with delicious wintertime flavors, including decadent salted caramel and warm hot chocolate. This simple recipe is also adaptable! If you don’t have salted caramel chips on hand, there are so many other flavors you can incorporate. Crushed candy canes or peppermint candies would be delicious. Or you could throw in some marshmallows to make them taste just like a warm cup of hot chocolate.

So, let’s get started making these yummy gluten free hot chocolate cookies. Start by mixing your dry ingredients — flour, hot chocolate mix, salt, and baking soda. Whisk these ingredients until combined, then set aside.

Next, cream your butter and sugars together until light and fluffy. Then, add in the eggs and vanilla and mix until combined. Finish this step by combining your dry ingredients with your butter mixture, one cup at a time. Your dough will end up very thick, so I recommend doing this step with your stand mixer using the paddle attachment. I didn’t. I used my hand mixer instead and it did not work well!

Finally, fold in your chocolate chips and caramel chips. You can do this step by hand or simply pour the chips into your stand mixer and mix until combined.

Scoop tablespoons of your batter out of the bowl and form balls. Then place the balls on a parchment paper lined baking sheet. Bake for 12 to 15 minutes or until the edges of your cookies are golden brown. Your cookies will look soft when you pull them out, but they’ll continue baking as they cool.

These cookies taste wonderful warm, so you don’t even have to wait until they’re completely cool to start enjoying them! Just let them cool on the pan for about 5 minutes, then remove them to a cooling rack to finish cooling. Or stack a few up on a plate and start eating right away!

If you want to to have a warm gluten free hot chocolate cookie after the cookies have completely cooled, you can! Just pop them in the microwave for around 10 seconds. You’ll instantly have a warm, gooey gluten free Christmas cookie to enjoy.
Gluten Free Hot Chocolate Cookies

Ingredients
- 3 1/4 cup gluten free baking flour
- 4 packages hot chocolate mix (not sugar free) or 1 cup hot chocolate mix
- 1 1/4 teaspoons salt
- 1 1/4 teaspoons baking soda
- 1 cup butter, room temperature
- 1 cup white sugar
- 2/3 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup semi-sweet chocolate chips
- 1 cup salted caramel baking chips
Instructions
- Preheat oven to 350 degrees.
- Whisk together gluten free flour, hot chocolate mix, salt, and baking soda. Set aside.
- Cream butter and sugars until smooth and fluffy.
- Add eggs and vanilla. Beat until combined.
- Add dry ingredients to butter mixture, one cup at a time.
- Fold in chocolate chips and caramel chips.
- Scoop out tablespoons of dough and form into a ball.
- Place balls on a parchment paper line baking sheet and bake for 12 to 15 minutes.
- Remove from oven and allow to cool on baking sheet for at least 5 minutes.
