These cookies taste amazing. But that’s not the best part about this recipe for mint chocolate chip cookies. What I love most about them is that they’re made with brownie mix! It makes the entire baking process so much faster and easier!
The combination of chew chocolate and refreshing mint make these delicious mint chocolate chip cookies perfect for the holidays! They’re such delicious gluten free Christmas cookies.
How to Make Brownie Mix Mint Chocolate Chip Cookies

Since these easy mint chocolate chip cookies are made with a boxed brownie mix, your measuring time is cut down significantly. To make these easy cookies, start by adding your brownie mix to a large mixing bowl. This recipe is for a traditional sized brownie mix (usually around 18 ounces).
Then, add your eggs and melted butter. Be sure to let the melted butter cool slightly before adding it in with the eggs. This will help prevent the eggs from scrambling from the heat of the butter.

After mixing the ingredients together, add in the mint baking chips. I used Andes baking chips. You could also use chopped up Andes Mint bars or Hershey’s mint chocolate chips.

Finish by scooping out the brownie mix cookie dough onto a parchment paper lined sheet. These yummy cookies spread as the bake, so make sure to give the cookies plenty of room (around 1 1/2 inches between each cookie) on the baking sheet!
Bake the mint chocolate chip cookies for 12 to 14 minutes. Remove them from the oven when the edges are sold but the center of the cookies is still slightly soft. Then, allow the cookies to cool on the baking sheet for five to 10 minutes before removing them to a wire cooling rack. While the cookies are cooling on the baking sheet, they’ll continue cooking, resulting in a chewy cookie when they’re cooled.

Of course! I have made this recipe with both traditional brownie mix and gluten free brownie mix. They are delicious either way. When making these cookies, I have tried using both Betty Crocker Gluten Free Brownie Mix and Aldi’s Gluten Free Chocolate Baking Mix. Both mixes worked well with this recipe. If your gluten free mint chocolate chip cookies dough seems dry, try adding a tablespoon of milk or water to the batter to soften it up a bit.
Can I use other add-ins?
There are so many delicious ways to make these brownie mix cookies! If you want to stick with a mint flavor, try using 1/4 cup crushed peppermint and an additional 1/4 cup chocolate chips. But if you want a completely different flavor all together, use toffee bits, like I did with these gluten free brownie mix cookies.

- Bake for 12 to 14 minutes, or until cookies are firm on the edges and soft in the center.
- Allow cookies to cool for at least 5 minutes on the baking sheet, then remove to wire cooling rack to cool completely.
