The key to making these easy cookies is using the right flour. Keep reading to see what my favorite gluten free flour blend is. I use it every time I bake!

To make these easy gluten free peanut butter cup cookies, you’ll need:

  • Gluten free baking flour: When it comes to learning how to make gluten free cookies, I have found that not any flour will do. I’ve tried several different brands of gluten free flours and I have found the best one is Bob’s Red Mill 1-to-1 Baking Flour by far!
  • Butter
  • Brown sugar
  • Granulated sugar
  • Egg
  • Peanut butter
  • Vanilla extract
  • Baking soda
  • Salt
  • Mini peanut butter cups

After looking at that list of ingredients, you may have a couple questions in mind, like:

  • Are Reese’s Peanut Butter Cups gluten free? The answer is yes! Traditional Reese’s peanut butter cups (full-sized, fun sized, and minis) are all gluten free. But there are other varieties of the peanut butter candies that do contain gluten, so make sure to to check your package before you add them to your cookie recipe.

How to Make Reese’s Peanut Butter Cup Cookies

Making these gluten free peanut butter cookies is a simple way to whip up a classic treat. And since you can make the dough and press it right into the pan without rolling each cookie, you can cut your prep time in half with this easy recipe!

To get started making these peanut butter snacks, first beat the butter, brown sugar, and granulated sugar together until the mixture is light and fluffy. Make sure to use softened butter to make it easier to blend your ingredients together.

Next, add the egg, vanilla, and peanut butter to the bowl. Beat the ingredients together until the mixture is smooth and creamy.

After that, add the gluten free flour, baking soda, and salt. Blend until a thick dough begins to form.

Then, you’ll need to cover the bowl and place it in the refrigerator to chill for at least one hour. That’s because the dough will be to soft to work with right after it’s blended.

Once the dough has had time to firm up, use a small cookie scoop to scoop out two tablespoons of the dough. Roll the dough between your hands into a ball and place each ball in one cup of a greased mini muffin pan.

When your muffin pan is full, place it in the oven to bake for 10 to 12 minutes at 350 degrees, until the cookies are golden brown but still slightly soft in the center.

Immediately after removing the pan from the oven, press one Reese’s peanut butter cup into the center of each of the cookies.

Allow the cookies to cool completely, then use a flat spatula to carefully remove them from the pan.

First, make sure to grease your pan liberally with nonstick cooking spray. Then, make sure not to over-bake your cookies. And once the cookies are out of the oven, grab your flat spatula to help loosen them from the pan after they’re cooled.

Can I use different peanut butter cups?

You can use any type of peanut butter cups you want in your cookies. Just make sure they’re small enough to fit in a mini muffin cup. It’s also a good idea to check your candy before you add them to the cookies to make sure they’re gluten free.

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 3/4 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 1/3 cups gluten free flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 36 mini peanut butter cups

Instructions

  1. Beat together the butter, brown sugar and white sugar until light and fluffy.
  2. Add the egg, peanut butter and vanilla and beat until smooth
  3. Add the gluten free flour, baking soda and salt. Beat until just combined.
  4. Cover and chill the dough for at least two hours.
  5. When ready to bake, preheat the oven to 350 degrees and grease a mini muffin pan with nonstick cooking spray.
  6. Use a small cookie scoop or tablespoon to scoop out the dough and roll it into a ball.
  7. Place each dough ball in one cup of the muffin pan. Bake for 10 to 12 minutes, until the edges of the dough are lightly browned.
  8. While the cookies are baking, remove the wrappers from the peanut butter cups. Immediately press the peanut butter cups into the
    center of each cookie while they’re still warm. Allow to cool in the pan for 5 minutes, then carefully remove the cookies from the pan and transfer to a wire cooling rack to cool completely.
