So many gluten free recipes are made homemade flour or require you to weigh out each ingredient before adding it to the bowl, making it so hard to find easy, safe-to-eat recipes! But what if I told you that you could make delicious cookies without all that hard work? These flourless gluten free monster cookies are a simple recipe that everyone in the family will love — no gluten free flour required!

Monster cookies are always a great option for a quick and easy gluten free sweet treat. In addition to being simple to make, there’s no need to add any flour to this recipe at all! The combination of oats and peanut butter create a delicious, chewy cookie without the need for flour.

This gluten free monster cookies recipe is not only easy to make, but it’s also packed with candy. In addition to using regular chocolate chips, it also has Reese’s Pieces and peanut butter cups in it too! That’s why they’re one of my favorite gluten free desserts.

Gluten Free Monster Cookie Recipe

The key to making these easy cookies is gluten free oats. Make sure you stay safe while eating these delicious treats by making sure to double-check the package of your oats to ensure they’re labeled gluten free.

To make these easy gluten free monster cookies, you’ll need:

  • Gluten free quick cooking oats: Be sure to check the package of your oats to ensure it’s labeled as gluten free. While oats are naturally free from gluten, many brands expose their oats to gluten containing ingredients during processing.
  • Butter
  • Brown sugar
  • Sugar
  • Egg
  • Vanilla
  • Peanut butter
  • Chocolate chips
  • Reese’s Pieces
  • Reese’s peanut butter cups

After looking at that list of ingredients, you may have a couple of questions in mind, like:

  • Are Reese’s gluten free? The answer is yes! Most varieties of Reese’s are gluten free, including peanut butter cups and Reese’s Pieces. That means it’s perfectly safe to add them to your cookies!
  • Which oats are gluten free? When using oats in this recipe, it’s important to check your package to make sure it’s labeled gluten free. There are a couple of great gluten free oats brands. My favorite is Bob’s Red Mill. You can also find gluten free Quaker oats at most major grocery stores.

How to Make Monster Cookies

The first step to making these easy cookies is to mix the dry ingredients together. Whisk your gluten free oats and baking soda together in a medium bowl. Once the ingredients are well combined, set the bowl aside.

Next, add your butter, brown sugar, and white sugar to a large bowl. Beat the ingredients until they’re smooth and creamy, making sure all the ingredients are fully incorporated and the butter is well mixed.

Add the eggs and vanilla extract to the sugar mixture and beat until smooth and well combined.

Scoop the creamy peanut butter into the bowl with the butter mixture and beat until smooth and well combined.

Pour the oat mixture into the bowl with the butter mixture and use a wooden spoon to combine the ingredients. Continue stirring until all the oats are coated with the butter and sugar mixture. The dough will be thick.

Add your chocolate chips and half of the Reese’s Pieces to the bowl with the dough. Carefully stir the ingredients together until the candy is evenly distributed around the dough.

When making monster cookies, I love to make huge cookies. I use an ice cream scoop to scoop out a spoonful of dough, then transfer the dough directly to a parchment paper lined baking sheet. Since the dough is sticky, an ice cream scoop with a release tab is perfect for creating your cookies without making a mess.

Once you have all your cookies scooped, use the back of the scoop to press down the dough balls slightly. Then, top with more Reese’s Pieces. Chop up your Reese’s peanut butter cups and press them into the top of each cookie, too.

When placing your cookies on the baking sheet, make sure to leave plenty of room between each cookie. These cookies will spread as they bake, so it’s a good idea to leave two to three inches of space between each cookie on the baking sheet.

These monster cookies will be soft when you remove them from the oven. It’s a good idea to let your cookies cool on the pan until they stiffen up a little bit. You can let the cookies cool on the pan completely or transfer them to a wire cooling rack after they’ve hardened.

How do I keep the cookies from spreading?

Like most chocolate chip cookie recipes and their variations, these cookies will spread slightly as they bake. But if you notice that your cookies are spreading more than normal, I suggest chilling the dough before baking. Place the cookie dough in the refrigerator for an hour, then scoop out the dough and bake it according to the recipe instructions.

Can I include more add-ins to the cookie dough?

Of course! You can incorporate a variety of different mix-ins to make different flavors of cookies. This cookie dough is similar to oatmeal cookies, which means it’s perfect for adding in a variety of different items. Classic monster cookies are typically made with M&Ms. You could also try mixing in:

  • Toffee bits
  • Chocolate chips
  • Peanut butter chips
  • Cinnamon chips
  • Espresso chips
  • Chopped up candy bars
  • Caramel pieces
How do I keep my monster cookies from falling apart?

Your monster cookies could be falling apart for two reasons: they weren’t baked long enough or they aren’t cooled completely. While you want your cookies to be soft when they come out of the oven, not giving your cookies time to fully cook will result in flimsy monster cookies. Make sure the bottom of the cookies are deep golden brown before removing them from the oven.

After taking the cookies out of the oven, it’s also important that you give the cookies time to cool on the pan. Letting your cookies rest on the pan gives them a few more minutes of cooking time outside the oven, allowing them to set up as they cool.

Can I use old fashioned oats?

Finding the right gluten free oats for you cookies can sometimes be difficult. If you’re having a hard time finding quick cooking gluten free oats, you can use old fashioned oats instead. To prepare your old fashioned oats for baking, place them in a blender or food processor. Pulse the oats until they’re partially ground to resemble quick cooking oats.

Ingredients

  • 2 ¼ cup quick cooking oats
  • 1 teaspoon baking soda
  • ½ cup butter, softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¾ cup creamy peanut butter
  • 1 cup mini chocolate chips
  • 1 cup Reese’s Pieces
  • 18 mini Reese’s peanut butter cups, cut in half

Instructions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, whisk the oats and baking soda together. Set aside.
  3. In a separate bowl, beat the butter, sugar, and brown sugar together until creamy.
  4. Add the eggs and vanilla and beat until smooth.
  5. Add the peanut butter and beat until well combined.
  6. Pour in the oat mixture and stir to combine.
  7. Fold in the mini chocolate chips and half the Reese’s Pieces.
  8. Use an ice cream scoop to scoop the dough. Place the dough ball on the parchment paper lined baking sheet and press down the top of the ball lightly when the back of the scoop. Keep each cookie at least two inches apart to allow for spreading.
  9. Press the remaining Reese’s pieces and mini peanut butter cups into the tops of the cookies.
  10. Bake in the preheated oven for 15 to 18 minutes, until the bottom of the cookie is golden brown but the center is still soft. Allow to cool completely on the baking sheet.



Notes

To make traditional monster cookies, substitute M&Ms for the Reese's Pieces and peanut butter cups.
