But with so many gluten free recipes using homemade flour or strange ingredients, making desserts that are safe to eat can be frustrating. But you definitely won’t be disappointed with these simple gluten free Reeses Pieces cookies! They’re made with just a handful of simple ingredients and can be prepared in a matter of minutes.

Don’t you just love peanut butter cookies? With this easy recipe, you can take plain peanut butter cookies up notch by adding Reese’s Pieces and chocolate chips!

This gluten free Reeses Pieces cookies recipe is packed with candy. In addition to using regular peanut butter chocolate candy, it also has mini chocoalte chips in it too! That’s why they’re one of my favorite gluten free desserts.

Gluten Free Reese’s Pieces Cookie Recipe

The key to making these easy cookies is cornstarch. Adding just a little bit of cornstarch to your gluten free cookie dough will help your recipe taste just like it came from a bakery.

To make these easy gluten free Reeses Pieces peanut butter cookies, you’ll need:

  • Gluten free baking flour: When it comes to learning how to make gluten free cookies, I have found that not any flour will do. I’ve tried several different brands of gluten free flours and I have found the best one is Bob’s Red Mill 1-to-1 Baking Flour by far!
  • Butter
  • Peanut butter
  • Brown sugar
  • Sugar
  • Egg
  • Cornstarch
  • Vanilla
  • Salt
  • Baking soda
  • Chocolate chips
  • Reese’s Pieces

After looking at that list of ingredients, you may have a couple questions in mind, like:

  • Are Reese’s Pieces gluten free? The answer is yes! Both Reese’s Pieces and Reese’s Peanut Butter cups are gluten free. The only Reese’s candy varieties you need to watch out for are the seasonal shapes, like pumpkins and Christmas trees. Those Reese’s are not gluten free because they are prepared in a different facility, where wheat-containing ingredients are also processed.

How to Make Reese’s Pieces Cookies

To get started making these peanut butter cookies, first mix the dry ingredients together. Whisk your flour, cornstarch, baking soda, and salt together in a medium bowl. Once all the dry ingredients are well combined, set this bowl aside.

After that, grab another bowl and add your softened butter, peanut butter, brown sugar, and white sugar. Beat those ingredients until they’re smooth and creamy, making sure the butters and sugars are fully incorporated. Then, add the egg and vanilla extract to the sugar mixture and beat until smooth and well combined.

Grab the bowl with the flour mixture and pour the dry ingredients into the bowl with the butter mixture. Use your mixer to mix the ingredients as well as you can. As the gluten free flour gets mixed with the butter and peanut butter, the dough may become too thick to mix with a hand mixer. If that happens, simply grab a wooden spoon and stir until all the flour is incorporated.

Add the chocolate chips and Reese’s Pieces to the batter. Use a spoon to fold all the candy into the batter, making sure the chocolate chips and candy are evenly distributed throughout the dough.

To make large cookies, like I did, use an ice cream scoop to scoop out a heaping spoonful of dough. Roll the dough between the palms of your hands to form a ball. Place the dough ball on a parchment paper lined baking sheet and press it down slightly. Top with more Reese’s Pieces if you would like to add some decoration to the top of each cookie.

You can also make smaller cookies by using a tablespoon to scoop the dough. If you plan on making smaller cookies, reduce the bake time by a few minutes.

Bake your cookies in your preheated oven for 13 to 15 minutes. You’ll know the cookies are ready to come out when the edges are golden brown but the centers are still slightly soft. Allow the peanut butter cookies to cool on the baking sheet for around five minutes, then transfer them to a wire cooling rack to cool completely before serving.

Can I Make Smaller Cookies?

This recipe makes around 14 large cookies. If you prefer to make a bigger batch of smaller cookies, you can use a tablespoon to scoop the dough. When using a tablespoon, you’ll get around 24 small cookies.

After scooping with a tablespoon, roll the dough ball between your hands and place it on the baking sheet. Press the ball down slightly, then bake the cookies for 10 to 12 minutes, until the edges of the cookies are golden brown but the center is still soft.

How do I keep the cookies from spreading?

These cookies come out thick and chewy, so you shouldn’t have issues with the cookies spreading too much. If your cookies are spreading as they bake, try putting the dough in the refrigerator for 30 minutes. Then, roll the balls and bake according to the recipe instructions.

Can I include more add-ins to the cookie dough?

Of course! You can incorporate a variety of different mix-ins to make different flavors of cookie. Since the base of this cookie is peanut butter, it’s a good idea to find flavors that complement the sweet and salty taste. You could also try mixing in:

  • Pretzel pieces
  • Toffee bits
  • Dark chocolate chips
  • Peanut butter chips
  • Mini peanut butter cups
  • Espresso chips
  • Chopped up candy bars
  • Caramel pieces

  • 2 ½ cups gluten free baking flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, softened
  • ½ cup creamy peanut butter
  • 1 cup brown sugar
  • ½ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup Reese’s Pieces
  • 1 cup mini chocolate chips

Instructions

  1. Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
  2. Whisk together the flour, cornstarch, baking soda, and salt. Set aside.
  3. In a large bowl, beat together the butter, brown sugar, and sugar until creamy. Add the eggs and vanilla and beat to combine.
  4. Add the dry ingredients and beat until a thick dough forms.
  5. Fold in the Reese’s Pieces and chocolate chips.
  6. Use an ice cream scoop to scoop the dough onto the prepared baking sheet. Use the back of the scoop to press the top of the cookie down slightly. Top with additional Reese’s Pieces, if desired.
  7. Bake in the preheated oven for 13 to 15 minutes, until the edges of the cookies are brown but the center is still soft.
  8. Allow the cookies to cool on the pan until the center sets, then transfer the cookies to a wire cooling rack to cool completely.
