One of the biggest things to consider when baking gluten free is the ingredients. And that’s especially true for the flour blend you use! Luckily, I have you covered. Here’s everything you need to prepare this delicious gluten free Oreo cake:

  • Gluten free baking flour. The key to making delicious gluten free cake is to use the right flour. I always bake with Bob’s Red Mill 1-for-1 Gluten Free Baking flour.
  • Baking powder
  • Salt
  • Unsalted butter
  • Sugar
  • Egg whites
  • Vanilla extract
  • Milk
  • Gluten free Oreos, crushed

Gluten free Oreos are fairly new to the market, which means you may be wondering where you can find the. Luckily, I have been able to grab packages of gluten free Oreos at Wal-Mart, Target, and my local grocery store (Kroger). That means they’re pretty easy to find.

How to Make Gluten Free Oreo Cake

You’re going to love how simple this dessert recipe is to make! And once you try it, you’ll want to whip up this yummy sweet treat over and over again.

The first step is to prepare the dry ingredients. Whisk together the gluten free baking flour, baking powder, and salt in a medium bowl. Once the ingredients are well mixed, set the bowl aside.

In the bowl of your stand mixer, add the softened butter and sugar. Using the paddle attachment, beat the two ingredients together until they’re light and fluffy.

After that, add the egg whites and vanilla and beat to combine. The mixture will be smooth and creamy at this point.

Add half the milk to the bowl, along with half the dry ingredient mixture. Beat to combine the ingredients, then add the remaining milk and flour mixture to the bowl and beat until mixed.

Mix in half the crushed gluten free Oreos with a wooden spoon until the cookie pieces are well dispersed around the bowl.

Transfer the cake batter to a 9×13 cake pan and bake at 350 degrees for 35 to 40 minutes. You’ll know the cake is done baking when a toothpick inserted into the center comes out clean.

When the cake is finished baking, place the pan on a cooling rack to cool completely.

How to Make Oreo Buttercream

Now that your cake is finished baking, you can start preparing the icing to spread on the top. While the cake is cooling follow these instructions to make gluten free Oreo buttercream.

In a large bowl, add the butter and vanilla extract, and beat until it is light and creamy.

Pour half the powdered sugar into the bowl and one tablespoon milk. Beat until smooth, then add the remaining powdered sugar and an additional tablespoon milk. You can add more milk to the icing to thin it, as needed.

To keep the frosting from getting lumpy, it’s a good idea to sift the powdered sugar before adding it to the bowl.

Once your cake is cooled completely, spread the prepared butter cream frosting over the top of the cake. Sprinkle the remaining gluten free cookie pieces over the top of the cake and lightly press them into place. After that, you can slice your cake and enjoy!

  • Try different cookies. If you can’t find gluten free Oreos where you are, there are a few other options you can use to make this cookies and cream cake. Try using Glutino sandwich cookies or Great Value gluten free sandwich cookies in place of the Oreos.

  • Ingredients for the Cake:
  • 2 3/4 cups gluten free flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 7 large egg whites
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 10 gluten free Oreos, crushed

Ingredients for the Icing:

  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 6 cups powdered sugar
  • 3-4 tablespoons milk
  • Additional crushed gluten free Oreos for decorating

Instructions

    1. Preheat the oven to 350 degrees and grease a 9x13 baking pan with nonstick cooking spray.
    2. In a large bowl, whisk together the gluten free flour, baking powder, and salt. Set aside.
    3. In a separate bowl, beat together the butter and sugar until light and fluffy.
    4. Add the egg whites and vanilla and beat to combine.
    5. Add half the dry ingredients and beat to mix, then add half the milk and beat again.
    6. Pour in the remaining flour and remaining milk, beating between each addition.
    7. Fold in the crushed gluten free Oreos.
    8. Pour the mixture into the prepared baking pan and bake for 35 to 40 minutes, until a toothpick inserted into the center comes out clean.
    9. Allow the cake to cool completely, then prepare the icing by beating together the butter and vanilla extract until smooth.
    10. Add half the powdered sugar and one tablespoon of milk and beat to combine. Then, alternate one cup of powdered sugar and one tablespoon of milk until all the sugar has been used. Add additional milk if needed to thin the icing.
    11. Spread the icing over the top of the cooled cake and decorate with crushed gluten free Oreos.
