  • Diced tomatoes with green chilies: With the help of some Rotel (diced tomatoes with green chilies), you can add even more Mexican flavor to your appetizer. Use hot or mild, depending on how spicy you want your dip to be.
  • Mayonnaise: While cream cheese makes up the base of this dip, you’ll need to mix in some mayo to help smooth it out and add a little bit of tang to the recipe.

Another name you may see on the cans if this type of corn is Southwest corn or Southwestern corn. Just like Mexicorn, fiesta corn and southwestern corn are basically the same recipe. Both are made with corn and peppers. When browsing southwestern corn recipes, you may find some variations to the ingredient list to include spicer peppers, like poblano or jalapeno, or additions like tomatoes or bacon.

  • 1 tablespoon butter
  • 1 can fiesta corn
  • 1 jalapeno, finely chopped

Instructions
