What I love about this easy gluten free brownie recipe is how quick it is to prepare! Since you only need a few simple ingredients and a few minutes of your time, you can have a delicious homemade sweet treat for the holidays in no time at all!

To make your own gluten free peppermint brownies, you’ll need a handful of simple ingredients, including:
- Gluten free baking flour. The key to making amazing gluten free desserts every time you bake is to use the right flour. I always bake with Bob’s Red Mill 1-for-1 Gluten Free Baking flour.
- Dark cocoa powder. Make sure to use unsweetened cocoa powder, not hot cocoa mix! You can also substitute regular unsweetened cocoa powder, but the chocolate flavor won’t be as intense.
- Espresso powder. Adding a small amount of espresso powder to your brownies is a quick and easy way to enhance the chocolate flavor. But if you don’t have any on hand, you can leave this ingredient out of the batter.
- Baking soda
- Salt
- Unsalted butter
- Sugar
- Large eggs
- Gluten free vanilla extract
- Gluten free peppermint extract
- Dark chocolate chips (or substitute milk chocolate or semi-sweet chocolate)
- Starlight peppermint candies or peppermint candy canes
How to Make Gluten Free Peppermint Brownies
Once you see how easy it is to make gluten free brownies from scratch, you’ll never want to use a boxed mix again! And the best part about this easy recipe is that you can customize it with different flavors!

The first step to preparing this one-bowl brownie recipe is to whisk together the butter and sugar until the sugar is fully dissolved.

After that, add the eggs and vanilla to the bowl. To keep the egg from scrambling while you stir, make sure to give your melted butter a few minutes to cool before adding the eggs to the bowl.

Once the egg and butter mixture is well combined, it’s time to add the dry ingredients. Stir in the gluten free flour, dark cocoa powder, espresso powder, baking soda, and salt. Continue stirring until all the dry ingredients are well combined and a smooth batter forms.

Then, add your chocolate chips to the bowl and fold them in with wooden spoon. Continue stirring the chocolate into the brownie batter until they’re evenly dispersed, making sure not to over-mix as you stir.

Grease a baking dish with nonstick cooking spray and spread the batter evenly across the pan. Place the brownies in the oven to bake for 20 to 30 minutes, until the edges of the brownies are beginning to brown and pull away from the pan.

After baking your brownies for around 15 minutes, remove the pan from the oven and sprinkle your crushed peppermint candy over the top. Then, return the pan to the oven to continue baking. This will prevent the brownies from rising up over the top of the peppermint as they bake.

- 1 ½ cups gluten free baking flour
- ½ cup dak cocoa powder
- 1 tablespoon espresso powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, melted
- 2 cups sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1 cup dark chocolate chips
- 15 starlight peppermint candies, crushed
Instructions
- Preheat the oven to 350 degrees and grease a 9x13 pan with nonstick cooking spray.
- In a medium bowl, whisk together the butter and sugar until well combined.
- Add the eggs, vanilla extract, and peppermint extract. Whisk to combine.
- Addthe gluten free flour, cocoa powder, espresso powder, baking soda, and salt and stir until just mixed.
- Fold in the dark chocolate chips.
- Spread the mixture evenly in the prepared pan and bake for 20 to 30 minutes, until the edges are just beginning to brown.
- Around 5 minutes before the cook time is up, sprinkle the crushed peppermint candy over the top of the brownies and continue cooking.
