To make these quick and easy cookies, you’ll need just a few simple baking supplies. Gather up these ingredients to start baking:

  • Gluten free baking flour. The key to getting delicious gluten free cookies is to use the right flour. I always bake with Bob’s Red Mill 1-for-1 Gluten Free Baking flour.
  • Unsweetened cocoa powder. Make sure to use unsweetened cocoa powder and not hot cocoa mix for this recipe.
  • Espresso powder. Mixing some espresso powder into the batter really brings out the chocolate flavor in your cookies. But if you’re not a coffee fan, don’t worry! You can’t taste the coffee flavor once the cookies are baked.
  • Baking powder
  • Salt

To start, whisk together the gluten free flour, unsweetened cocoa powder, espresso powder, baking powder, and salt. Once all the ingredients are well combined, set the bowl aside.

Next, beat together the butter and sugar until it’s light and fluffy. Make sure the butter is fully creamed to avoid having butter chunks in your cookies.

After that, add the melted chocolate chips to the bowl and beat the chocolate into the butter mixture until it’s fully incorporated.

Then, add the egg and vanilla extract and beat untill all the ingredients are smooth and well combined.

Once all the wet ingredients are combined, add the flour mixture to the bowl and beat until a thick dough begins to form.

Now that you have your dough prepared, it’s time to mix in the Andes mints! Add your chopped candy pieces to the bowl and gently fold them into the cookie dough.

Can I Leave Out the Espresso Powder?

If you don’t have any espresso powder, don’t worry! This ingredient won’t make or break the recipe. You can simply leave it out of your cookies, although the chocolate flavor in the final baked treat won’t be as strong.

  • 2 1/4 cups gluten free baking flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon espresso powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 cup butter, softened
  • 1/2 cup semi-sweet chocolate chips, melted
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup finely chopped Andes mints

Instructions

    1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
    2. In medium bowl, whisk together the gluten free flour, cocoa powder, espresso powder, baking powder, and salt. Set aside.
    3. Beat together the sugar and butter in a large bowl until smooth and creamy.
    4. Add the melted chocolate and beat to combine.
    5. Add the eggs one at a time, beating between each addition.
    6. Add the vanilla extract and beat until mixed.
    7. Add the dry ingredients and mix until well combined.
    8. Fold in the chopped mints.Cover the bowl and chill the dough for at least one hour.
    9. Use a cookie scoop to scoop out the dough and place the dough balls on the lined baking sheet, leaving at least one inch between each cookie for spreading.
    10. Bake 10 to 12 minutes, then allow the cookies to cool on the baking sheet for five minutes. Transfer the cookies to a wire cooling rack to cool completely before serving.
