Slow Cooker Chili Cheese Dip with Velveeta

The base of this dip is Velveeta, giving it a smooth and creamy texture that matches well with just about anything you dip in it. And since it’s a homemade chili cheese dip, it’s sure to appeal to just about everyone at the party.

To make this easy Velveeta chili cheese dip recipe, you’ll need just a few ingredients:

  • Velveeta: To create a thick and creamy base for your chili dip, Velveeta is a must. Cut cut your cheese loaf into cubes and toss it into the slow cooker to easily make a creamy, cheesy dip.
  • Ground beef: Making homemade chili dip doesn’t have to be difficult! You just need to take one extra step — cook the ground beef. Any type of ground beef will work for this recipe, just make sure to drain the fat from fattier cuts.
  • Chili seasoning: The key to adding chili flavor to your dip is chili seasoning. You can use store-bought chili seasoning or make your own. But if you’re hoping to make this recipe gluten free, always be sure to check the ingredients of your seasoning packet before mixing it with the rest of the dip ingredients. You can typically find gluten free McCormick chili seasoning or gluten free Pioneer chili seasoning at your grocery store.
  • Chili beans: Just like a real bowl of chili, this dip is made with beans. You can use any type of chili beans for this recipe. But if you’re hoping to make this dip gluten free, always check the ingredients on the back of the can. I always use Bush’s beans because they’re labeled gluten free.

How to Make Chili Cheese Dip

In addition to having only four ingredients, this easy Velveeta chili dip couldn’t be simpler to make! Just follow these quick steps to prepare your own slow cooker dip for your next party.

The first step to making this quick recipe is to brown your ground beef. Since the beef won’t cook properly in the slow cooker, it needs to be made ahead of time. Simply add the beef to a skillet and cook over medium heat, breaking up the beef as it cooks. Continue cooking until the meat is brown and cooked through.

Once your beef is ready to go, spray the inside of your slow cooker with nonstick cooking spray. This is an important step because if you don’t, the Velveet will probably start sticking to the sides of the pot and burn.

After that, add half the cheese to the bottom of the crockpot. Make sure to cut your Velveeta into small cubes to help it melt faster and evenly.

Next, add the ground beef to the top of the Velveet layer. Sprinkle the chili seasoning over the top of the meat. There’s no need to stir the ingredients at this point. Once the cheese begins to melt, it will be easier to stir everything together.

On top of the ground beef and chili seasoning, add the beans. Just spread the chili beans in an even layer over the top of the meat.

Finish by topping the beans with the remaining Velveeta cheese.

After that, place the lid on the slow cooker and set it to cook on low. The dip will take at least two hours to cook, but you can speed up the cooking time by stirring the ingredients together after around one hour of cooking.

Once the Velveet is fully melted and all the ingredients are well combined, you can set your slow cooker to the warm setting to keep the cheese from burning. The dip can be kept on the warm setting for a few hours, just make sure to stir it occasionally to keep the cheese on the bottom from burning.

If you’re wondering whether chili cheese dip is gluten free, the answer is it depends. While some recipes don’t use any gluten-containing ingredients, others do. That’s why it’s a good idea to make your own dip instead of relying on someone else. That way, you know exactly what’s in the recipe before you eat it.

This four ingredient recipe is gluten free when it’s served with gluten free dippers, like tortilla or corn chips, and when you use gluten free chili seasoning and chili beans. I suggest using Pioneer gluten free chili seasoning and Bush’s chili beans to ensure your dip is gluten free.

How Long is Chili Cheese Dip Good for in the Refrigerator?

As long as the slow cooker is on and you continue stirring the dip, you can snack on it for a few hours. But since this dip is made with ground beef, the longest I would recommend letting this dip sit out is two hours after the slow cooker has been turned off.

After that, it’s a good idea to refrigerate the dip until you’re ready to eat it again. Before placing the dip in the refrigerator, be sure to cover it with plastic wrap to keep the Velveeta from hardening. You can store the dip in the refrigerator for up to three days. Just reheat it in the microwave.

How Do You Keep Velveeta Cheese Dip from Hardenening?

This slow cooker chili cheese dip is so easy to make because you only need four ingredients!

Ingredients

  • 1/2 pound ground beef
  • 16 ounces Velveeta cheese, cubed
  • 2 tablespoons chili seasoning mix
  • 1 can chili beans

Instructions

  1. Brown the ground beef in a skillet. Remove from heat when the beef is cooked through.
  2. Spray the bowl of a slow cooker with nonstick cooking spray. Place half the Velveet in the bottom of the bowl.
  3. Top the velveeta with the cooked ground beef and chili seasoning.
  4. Add the chili beans.
  5. Top with remaining Velveeta cheese.
  6. Place the lid on the slow cooker and cook on low for 3 hours.
  7. After one hour of cooking, remove the lid and stir the ingredients together. Return the lid to the pot and continue cooking for another 2 hours, stirring the dip occasionally.
