How to Make Gluten Free Chicken Parmesan

The trick to making these delicious gluten free parmesan crusted chicken is to cut the chicken breasts in half before you coat them. This will help cut down on the cook time and ensure sure you have a delicious crunch in every bite.

Start by using a sharp knife to cut each chicken breast in half lengthwise to create a thin filet. That turned a package of two chicken breasts into four filets perfect for my gluten free parmesan chicken recipe.

When your chicken is ready to go, start by preparing your dredge and gluten free bread crumbs. The dredge for this easy baked gluten free chicken parmesan is made of a little bit of milk and one egg. To make the egg wash, simply whisk the two ingredients together until they’re well combined and set aside while you prep your bread crumbs.

In a separate bowl, add your favorite gluten free bread crumbs (I love 4C gluten free bread crumbs). Season the bread crumbs with dried oregano, salt, black pepper, and garlic powder. Whisk all the ingredients together until they’re well combined and the seasoning is evenly distributed throughout the bread crumbs.

Now that you have your yummy coating ready for your baked gluten free parmesan chicken, let’s put it all together! You can start by dipping each chicken breast in the egg and milk mixture, making sure both sides are coated with the dredge.

Then, dip the coated chicken breast into the bread crumb mixture. I like to dip each side into the bread crumbs twice, pressing the crumbs into the breast as I dip. This helps the bread crumbs stick to the chicken breast and provides an even coating for baking.

When the cheese is nice and golden brown, remove your gluten free chicken parm from the oven. Add a serving of pasta to each plate, then top the pasta with the baked parmesan chicken.

This simple gluten free recipe really is easy to make. But with these tips, you’ll end up with the most delicious weeknight dinner without any problems at all!

  • Don’t forget the nonstick cooking spray! Since this recipe for chicken parmesan is baked instead of fried, you need a little bit of oil to make the bread crumbs crisp. While you could brush the coated chicken breast with oil, I have found it’s easier to spray them to keep the bread crumbs from coming off. If you’re not a fan of nonstick cooking spray, try using an oil mister instead.
  • Filet the chicken breasts for a shorter cook time. You can make this recipe for parmesan chicken in under 45 minutes because the chicken breasts are fileted. Cutting the chicken in half results in a thinner piece of meat, which cooks more quickly than a full chicken breast.
  • Line the pan for quick clean-up. Make your job a little easier after dinner is over by lining your baking dish with foil or parchment paper. After dinner is cooked, simply remove the paper and you’ll have one less pan to wash!

Ingredients

  • 2 chicken breasts
  • 1 egg
  • ¼ cup milk
  • 1 cup gluten free bread crumbs
  • 1 teaspoon parsley flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup shredded parmesan cheese
  • 1 jar marinara sauce, divided
  • 1 cup shredded mozzarella cheese
  • 1 16-ounce package gluten free spaghetti, prepared
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 400 degrees. Prepare a baking sheet by spraying with nonstick cooking spray or lining with parchment paper.
  2. Slice chicken breasts in half lengthwise to create four thin chicken breasts. Set aside.
  3. In one shallow bowl, whisk together the egg and milk.
  4. In a separate shallow bowl or plate, combine the gluten free bread crumbs, parsley flakes, salt, black pepper, and garlic powder.
  5. Dip each chicken breast in the egg mixture, then in the bread crumb mixture. Press the bread crumbs into the chicken breast and place each breast on the prepared baking sheet.
  6. Spray each chicken breast with nonstick cooking spray and top with shredded parmesan cheese.
  7. Bake in the preheated oven for 20 minutes.
  8. Remove from oven and spoon marinara sauce on top of each chicken breast. Top with shredded mozzarella cheese and place back in oven to bake for 10 more minutes.
  9. While the chicken is baking, pour remaining marinara sauce into the cooked gluten free pasta and stir to coat.
  10. Serve chicken breasts over the top of the sauced gluten free spaghetti.
