Shrimp makes such a great appetizer because it’s so versatile! You can make this recipe for a fancy party or on game day and everyone will love it! The first step to making these simple shrimp appetizers is to gather your ingredients. To make gluten free coconut shrimp, you’ll need:

  • Jumbo shrimp: Using fresh shrimp is essential for getting the most flavorful appetizer. But if all you have is frozen, make sure to thaw the shrimp before making your appetizers.
  • Gluten free flour: This recipe uses a flour dredge along with a breadcrumb coating, making it extra flavorful.
  • Egg: Using egg in your fried shrimp coating is essential to getting the breadcrumbs to stick to your shrimp.
  • Gluten free panko breadcrumbs: The crunchy texture of panko breadcrumbs is what makes these shrimp so delicious.

How to Make Gluten Free Coconut Shrimp

After you have gathered all your ingredients, you’ll need to prepare them by separating your batter ingredients into three shallow bowls:

  1. Gluten free flour mixed with salt and pepper
  2. Beaten eggs
  3. Panko breadcrumbs mixed with coconut

Once you have all your coating ingredients ready to go, fill a deep skillet with oil and heat over medium heat.

While the oil is heating up, start preparing your shrimp. First, dip the shrim in the flour mixture and press to coat. Then, dip the coated shrimp in egg followed by the panko breadcrumb mixture. Again, press the breadcrumbs into the shrimp until they stick.

Set the coated shrimp aside and continue dipping until all your shrimp are covered. By that time, your oil should be ready to go. Start adding shrimp to the hot oil in batches of three or four. Be careful not to overcrowd the pan or the shrimp won’t cook evenly.

When the shrim begin to turn golden brown, they’re ready to come out of the oil. It won’t take long — five or six minutes per batch!

Transfer the cooked shrimp to a paper towel lined plate to cool, then put them on your serving platter to serve to your guests.

Ingredients

  • 1/3 cup gluten free flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 eggs, beaten
  • 1/2 cup gluten free panko breadcrumbs
  • 3/4 cup sweetened shredded coconut
  • 1 pound jumbo shrimp, peeled and deveined
  • oil for frying

Instructions

  1. Fill a large skillet with at least one inch of oil and heat over medium heat.
  2. Whisk together the gluten free flour, salt, and black pepper in a shallow bowl.
  3. Add the eggs to another shallow bowl.
  4. Combine the breadcrumbs and coconut in a third shallow bowl
  5. .Dip each shrimp in the flour mixture, then the egg mixture, and then the breadcrumb mixture. Press the shrimp into the breadcrumbs until it's completely covered.
  6. Continue dipping until all the shrimp have been coated.
  7. Fry the shrimp in batches of four, being careful not to overcrowd the pan.
  8. Place cooked shrimp on a paper towel-lined plate to cool before serving.
