  • Gluten free pizza crust mix. To make the dough to wrap around the outside of your sausages, you’ll need gluten free pizza crust. My favorite dough mix is Bob’s Red Mill Pizza Crust Mix.
  • Little smokies
  • Egg
  • Butter
  • Garlic powder
  • Parsley flakes

After gathering up your ingredients, you’ll just need a few minutes of prep work to get started on this quick and easy recipe, along with a short resting time for the dough to rise.

Before you can put your pigs in a blanket together, you’ll need to prepare the pizza crust dough. Follow the instructions for making the dough, including the time you’ll need to let the dough rise and rest. You can move on to the next step in this recipe when the pizza dough is finished.

Once your dough is ready for baking, it’s time to start wrapping your little smokies! Your gluten free pizza crust dough will probably be pretty sticky, so I’m just warning you ahead of time that this can get messy!

To keep the dough from sticking to you hands, I suggest putting a bowl of water next to your work surface. Dampening your hands while you’re working with the dough will help keep it from sticking to your hands and falling apart.

Use a tablespoon to scoop out a small amount of pizza dough from the bowl. Place the dough between the palms of your hands and flatten it out until it’s a small rectangle. Carefully wrap the dough around the outside of the smokie and place it seam side down on a parchment paper lined baking sheet.

Bake the smokies in the oven according to the instructions on your pizza dough package. I cooked mine at 425 degrees for around 20 minutes. After the 15 minute mark, start checking on the dough. the pigs in a blanket are finished baking when the crust is golden brown.

Allow the sausages to cool on the pan for around five minutes, the brush the top of each one with butter. Sprinkle some garlic powder and parsley over the top of each one before serving.

Ingredients

  • 1 package gluten free pizza crust mix, prepared
  • 1 28 ounce package little smokies
  • 1 egg, beaten
  • 4 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley flakes

Instructions

  1. Preheat the oven to 425 degrees and line a baking sheet with parchment paper.
  2. Use a cookie scoop or tablespoon to scoop out dough and flatten the ball between your hands.
  3. Carefully wrap the flattened dough around a little smokie and place it on the lined baking sheet.
  4. Continue wrapping until all the sausages are wrapped with dough. Brush the top of each sausage with egg.
  5. Bake in the preheated oven for 15 to 20 minutes, until the dough is golden brown.

  1. Can the gf dough be rolled out and cut into triangles, then roll up?
    How far ahead can you make before ba king?

    1. I haven’t had much success with rolling out this dough. It’s just too sticky. You can wrap the sausages in the dough and store them in the refrigerator up to one day before you cook them. Make sure they’re not touching in the fridge because the dough will stick together as it sits.
