But my favorite part about this simple recipe is how easy it is to customize! To make the meat and cheese bites like mine, you’ll need:

  • Mozzarella cheese. I purchase a block of mozzarella cheese and cut it into cubes for my appetizer picks, but you can use any type of cheese you want for your own bites!
  • Salami and pepperoni. Get large slices of salami and pepperoni from the deli for the best presentation. Large slices cut thinly make it easy to fold the meat into ruffles to add to your toothpicks.
  • Mini dill pickles. I used dill Vlasic Snack’ems for my appetizers, but you could use any brand or flavor you want, including sweet or spicy pickles.
  • Green olives. Make sure to drain and rinse your olives before adding them to the picks!
  • Toothpicks. Use toothpicks or other appetizer picks to hold all your charcuterie bite ingredients together.

How to Make Charcuterie Bites

Putting these bite-sized appetizers together couldn’t be easier! Just follow these quick and easy steps for folding and stacking your ingredients.

Start by preparing the cheese. If you purchased pre-cut cheese cubes, skip this step. Otherwise, cut your block of cheese into one-inch cubes.

After that, lay all your cheese cubes on a flat surface. Grab a piece of salami and fold it in half, then in half again to form a triangle shape. Place the triangle on top of the chese cute and repeat the process with the pepperoni.

Finish by topping the stack with a mini pickle or an olive. Make sure your ingredients are stacked evenly, then slide a toothpick through the top of the stack, making sure to push it all the way through the meat and down into the cheese.

  • Cheese. In addition to meat, charcuterie boards also have a variety of cheeses, including mozzarella, swiss, gouda, cheddar, havarti, colby, or monterrey jack. And while soft cheeses won’t work well on your charcuterie bites, you could also add them to your board, including brie, feta, blue cheese, or goat cheese.
  • Bread and crackers. Add some crunch to your board with the help of bread and crackers. Try mixing in some butter, multigrain, and nut crackers to create a variety, along with bread slices to enjoy with the meat and cheese.

Combine meat and cheese to create a delicious appetizer for your party with these no bake charcuterie bites.

Ingredients

  • 1 pound mozzarella cheese block
  • 30 slices salami
  • 30 slices pepperoni
  • 15 mini dill pickles
  • 14 green olives
  • Toothpicks

Instructions

    1. Cut the cheese block into 30 cubes. Place all the cubes on a flat surface.
    2. Fold a slice of pepperoni in half, then in half again. Place it on top of one cheese cube.
    3. Fold a slice of salami in half, then in half again. Place it on top of one cheese cube.Top with a mini pickle or olive.
    4. Slide the toothpick through the center of each piece of the stack to hold them in place.
    5. Continue building the stacks, alternating between pickles and olives on top.
