How to Make Gluten Free Cherry Pie

The key to making this delicious gluten free cherry pie recipe is mastering the crust. After that, you’ll just need to fill it with some delicious cherry pie filling to enjoy a slice of this classic dessert. Here’s what you need to make gluten free cherry pie:

  • Gluten free pie crust. The first thing you’ll need to make to prepare this dessert is the crust. My recipe for gluten free pie crust is made with both butter and shortening for a delicious, flaky pie.
  • Cherry pie filling. Once you have your crust prepared, you need to fill it with cherry pie filling. You can use your favorite recipe for cherry pie filling or use two cans of premade filling.

To make the crust, you’ll need:

Prepare the crust by whisking together the flour, sugar and salt. Use a food process or pastry blender to cut the cold butter and shortening into the flour until the mixture resembles coarse sand. Stir in the cold water, one tablespoon at a time, until the dough starts to come together.

Separate the dough into two balls. Place one ball on top of a piece of plastic wrap and press it into a disk. Put another piece of plastic wrap on top and roll the dough out until it’s around 1/4 inch thick. Chill the dough for at least four hours.

After the dough has chilled, transfer one of the crusts to the bottom of your pie pan. Carefully press it into place and run a knife around the edge of the pan to remove the extra crust.

Add your cherry pie filling to the crust, making sure it’s spread evenly over the top of the crust.

Carefully place your other crust on top of the pie filling. Use a fork to press the two crusts together along the edge of the pan. Then, run a knife around the edge of the pan one more time to remove extra crust.

Finish by using a sharp knife to cut slits in the center of the pie crust to allow the pie filling to vent as it cooks.

Use a pie crust mix. Another simple way to speed up the preparation process of making cherry pie is to use a mix. Bob’s Red Mill makes a great gluten free pie crust mix, which makes preparing your pie a little bit easier.

Add a different pie filling. This pie crust is perfect for any type of pie, which means you can easily add a different filling to create different pie flavors. You can create a double-crusted pie using fruit fillings like apple or blueberry. Or make a pie with a custard filling, like pumpkin or gluten free chocolate pie, with a single pie crust.

Ingredients

  • 2 1/2 cups gluten free baking flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 cup butter, cubed and chilled
  • 1/2 cup shortening, chilled
  • 1/2 to 3/4 cup ice cold water
  • 1 egg, beaten
  • 2 cans gluten free cherry pie filling

Instructions

  1. Blend the flour, sugar, salt, butter, and shortening in a food processor until the mixture resembles coarse sand.
  2. Transfer the mixture to a bowl and add the water, one tablespoon at a time. Stir between additions until the dough begins to come together.
  3. Separate the dough into two equal mounds. Use your hands to form one mound into a disk and place it between two pieces of plastic wrap.
  4. Use a rolling pin to roll the dough until it's around 1/4 inch thick. Repeat with the second mound of dough.
  5. Keep the dough covered with plastic wrap and chill for at least four hours or up to overnight.
  6. When ready to bake, preheat the oven to 425 degrees. Measure the pie crust to make sure it is wide enough to cover the pan. If not, use a rolling pin to roll it out until it's big enough. Then, remove one side of the plastic wrap and transfer the dough to a pie pan, then remove the second piece of plastic wrap. Add the cherry pie filling.
  7. Remove one piece of plastic wrap from the second dough disk and carefully place it on top of the pie. Remove the remaining piece of plastic wrap. Use a sharp knife to cut slits in the center of the crust to vent. Brush the top of the pie crust with the beaten egg.
  8. Run a knife around the edge of the pan to trim off the extra crust, then pinch the crust together or use a fork to seal it in place.
  9. Bake for 25 to 35 minutes, until the crust is golden brown and the filling is bubbling. Allow the pie to cool completely before serving.

    1. If you can’t find Bob’s Red Mill, I would suggest King Arthur Gluten Free Measure for Measure flour.
