Finding easy meals that actually taste good can be pretty exhausting — especially when you have picky eaters at home. When it comes to dinner in our house, I can’t go wrong with Italian. If your family loves pasta, this simple recipe for gluten free lasagna is sure to be a hit.

I’ve always loved lasagna, but since going gluten free, I haven’t be able to eat it! That’s why I was so excited when I found Barilla gluten free lasagna noodles in my grocery store! They taste amazing and they’re oven-ready, which means there’s no need to precook them!

After doing a little research, I found that Barilla isn’t the only brand to make gluten free lasagna noodles! Here are all the brands you could try with this recipe:

I have tried the Barilla, Jovial, and Tinkyada varieties, and I found that Barilla tastes the best and is the easiest to make. Since both Jovial and Tinkyada are traditional noodles, you need to precook them before baking the lasagna. And since they’re made with only brown rice, they’re a little chewier than I liked. But both those brands are 100% organic, so if that’s important to you, then either one would be a god option.

Gluten Free Lasagna Recipe

Once you have your noodles picked out, it’s time to start cooking. Keep in mind that this recipe is made using oven-ready lasagna noodles. If your brand is not oven-ready, you’ll need to boil the noodles before baking them.

To make this easy gluten free lasagna recipe, you’ll need:

  • Ground beef or ground Italian sausage: You can use either type of meat in your lasagna or a combination of the two. If using sausage, make sure to check the package to ensure it’s gluten free!
  • Onions and garlic: As you’re browning your meat, add some onions and garlic to give the meat flavor before adding it to your sauce.
  • Marinara sauce: To make this recipe super simple, I used canned marinara sauce. My favorite is Hunt’s (because it’s cheap and tasty) but you can use any brand you want for this recipe!
  • Ricotta and cottage cheese: The cheese layer of my lasagna recipe uses a combination of ricotta and cottage cheese. Depending on your preferences, you can use both cheese or just one. If you want to use only ricotta or only cottage cheese, just double the amount in the recipe.
  • Gluten free lasagna noodles: Grab a box of noodles for your pasta. I love using oven ready noodles to make meal prep easier.
  • Parmesan and mozzarella cheese: Increase the cheesiness of your lasagna with the help of two kinds of shredded cheese.
  • Seasoning: Up the flavor of your gluten free pasta with the help of Italian seasoning, salt, and pepper.

How to Make Gluten Free Lasagna

The first step to making this pasta dish at home is to make the sauce. Start by browning the ground beef with the onions and garlic. Cook until the meat is cooked through and the onions are translucent.

After your meat is cooked, drain the excess fat from the pan and add your sauce. Stir to combine the meat and sauce, then remove your pan from heat and set it aside for a second while you make your cheese filling.

Prepare the cheese layer for your pasta by stirring together the cottage cheese, ricotta cheese, parmesan cheese, salt, pepper, and Italian seasoning. Once all the ingredients are thoroughly combined, you can set your bowl aside.

Cover the bottom of your pan with a thin layer of meat sauce, then create a layer of noodles on top. You can slightly overlap the noodles in the pan, if needed, but don’t overlap them too much.

Cover the noodles with a layer of cheese mixture, adding just enough to cover the noodles. Spread the cheese evenly over the top of the noodles.

Cover the cheese with more sauce, making sure any exposed pasta is covered with sauce. If the pasta isn’t completely covered with sauce, it won’t cook, so it’s important to make sure all your gluten free lasagna noodles are covered to ensure the dish bakes evenly.

After covering the cheese layer with sauce, sprinkle a thin layer of mozzarella chese over the top.

Continue layering the pasta, cheese mixture, sauce, and shredded cheese until your lasagna has almost reached the top of the dish. Finish your lasagna with a layer of pasta, topped with the remaining sauce and mozzarella cheese.

Spray the bottom of a piece of foil with nonstick cooking spray and place it on top of the casserole dish. Bake the lasagna covered for 45 minutes, then remove the foil and bake for another 10 to 15 minutes, giving the sauce time to reduce and the cheese time to brown.

Does gluten free pasta taste good?

It depends on the brand. My favorite gluten free pasta is Barilla. To me, it tastes just as good as traditional pasta. Barilla uses a combination of rice and corn flours to make their pasta. And the gluten free lasagna noodles were the perfect consistency when baked. My family couldn’t tell the difference between the gluten free version and traditional lasagna.

Who makes gluten free lasagna?

There are a few different brands that make gluten free lasagna noodles. I have found Barilla, Jovial, and Tinkyada versions at Wal-Mart and Kroger. Scroll up to the top of the recipe post to find links to those and other brands available on Amazon.

Do you have to precook gluten free lasagna sheets?

You’ll need to check your pasta’s package to see if the sheets need to be precooked. If the pasta says “oven-ready” on the package, like Barilla, there’s no need to boil the pasta before baking it in your lasagna. But if the package does not state that the noodles are oven-ready, they need to be precooked. Both Jovial and Tinkyada lasagna noodles should be boiled before adding them to the lasagna dish. Read the package instructions to see how long you need to cook each brand before baking the noodles.

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 jars marinara sauce
  • 1 15 ounce container ricotta cheese
  • 1 16 ounce container cottage cheese
  • ½ cup shredded parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 9 gluten free oven ready lasagna noodles
  • 3 cups shredded mozzarella cheese

Instructions

    1. Preheat the oven to 375 degrees. Grease a 9x13 baking dish with nonstick cooking spray.
    2. Brown the ground beef in a large skillet, along with the onion and garlic. When the meat is cooked through, stir in the marinara sauce and remove the pan from heat.
    3. In a large bowl, combine the ricotta cheese, cottage cheese, parmesan cheese, Italian seasoning, salt, and pepper.
    4. Spoon a thin layer of sauce over the bottom of your pan and top it with lasagna noodles.
    5. Spread a layer of cheese mixture over the noodles, and top it with a layer of sauce and a layer of mozzarella cheese.
    6. Continue creating layers of pasta, cheese mixture, sauce, and mozzarella cheese until all the pasta has been used. Top the lasagna with a layer of sauce and remaining mozzarella cheese.
    7. Cover the pan with foil and bake in the oven for 45 minutes, then remove the covering and cook for an additional 10 to 15 minutes, until the cheese is beginning to brown.
    8. Allow the gluten free lasagna to rest for 10 minutes before slicing and serving.

  1. Flavor was perfect but consistency was too runny. How do I firm it up?

    1. I’ve had that same issue with gluten free oven-ready noodles before. Usually it depends on the type of sauce. If you use a thin, runny sauce (like Hunts) you might need to reduce the amount of sauce you add to the dish. It’s also a good idea to make sure you drain all the grease from the ground beef before you mix into the sauce or it could cause the lasagana to be too greasy when it’s finished cooking.

  2. Can I pre bake this? Does it reheat well?

    1. I haven’t tried prebaking it, but I think it should be fine. I would suggest taking the pan out of the fridge and letting it sit at room temperature for around 30 minutes before you start cooking so the pan won’t be cold when you put it in the oven.
