When you’re searching for gluten free dessert ideas, poke cake is the way to go! It’s quick and easy to make. And all you need to make them is a handful of simple ingredients, including:

  • Gluten free white cake. Kinnikinnick makes a delicious gluten free white cake mix that works perfectly with this recipe! Or use your favorite white cake recipe to prepare this simple dessert.
  • Jello: The key to giving your plain cake added flavor and color is Jello. I used Sonic Ocean Water gelatin to make this blue cake, but you can use any flavor of instant Jello to prepare your own poke cake.
  • Icing. Top your poke cake with your favorite icing recipe or use premade icing for even faster prep time.

Gluten Free Poke Cake Recipe

The key to making this easy recipe is a delicious gluten free white cake. Start by preparing your cake and allowing it to cool completely, then you can start poking!

Prepare your white cake in a 9×13 cake pan and allow the cake to cool completely. Use a fork or straw to poke holes all over the cake to allow the Jello mixture to soak into the cake.

Next, prepare the Jello. You want your gelatine to be more flavorful than traditional Jello, so don’t follow the instructions on the box. Instead, simply mix 1 1/2 cups of boiling water with the Jello packet.

Allow the Jello mixture to cool slightly, then pour the gelatin over the top of the cake, making sure to pour it over each of the holes poked into the cake to ensure you get plenty of gelatin into the cake itself.

After all the gelatin has been used, place the cake in the refrigerator to chill for at least one hour. You can leave the cake in the fridge up to overnight, allowing you to prepare the cake ahead of time if you need to.

When you’re ready to serve your cake, remove it from the refrigerator and prepare the icing. If you plan on making this ocean water cake, combine one container of vanilla icing with a few drops of blue food coloring. Stir the food coloring into the icing until the desired shade of blue has been reached.

Alternate between blue and white icing as you add the icing to the top of the cake. Keep adding spoons of icing to the top of the cake until all the icing has been used.

Use a spatula to spread the icing over the cake, swirling the two icing colors together as you spread.

These simple serving ideas and suggestions are a great way to adapt this gluten free recipe to suit your party’s theme or your guest’s preferences. Try these ideas the next time you make your own Jello poke cupcakes:

  • Add garnishes or decorations on top. Use the flavor of your Jello to come up with fun garnishes to add to the top of the cake. Since the Ocean Water gelatin has a coconut flavor, I sprinkled shredded coconut on top of the cake and place a cherry on top of each slice.
  • Top with Cool Whip. A traditional topping for Jello poke cake is Cool Whip. Instead of topping your cake with icing, try piping whipped topping on top. Just make sure to keep the cake chilled until you’re ready to serve it to keep the whipped topping from melting.
  • Use different Jello flavors. You can turn this poke cake recipe into a festive dessert for any occasion simply by changing the Jello flavors! Just follow the instructions using your gelatin to create a variety of different desserts.
