No Bake Cookie: Pterodactyl Eggs in a Nest

One of the funnest parts of party planning for me is re-envisioning recipe names to suit the party’s theme. This time, I used a classic Easter no bake cookie at a dinosaur party — making eggs in a nest into pterodactyl nests.

These yummy no bake cookies combine the sweet flavors of butterscotch and peanut butter with the salty crunch of chow mein noodles. Combined with yummy Whopper Easter eggs, these were a hit with the kids, who had fun imagining the nests filled with potential baby dinos.

These no bake cookies are simple to make, but be prepared to get your hands dirty because they are messy! The ingredient list is short, too! To make about 30 nests, I used two bags of chow mein noodles, one bag of butterscotch chips, half a jar of peanut butter and half a bag of Whoppers Robin Eggs.

To start, melt the butterscotch chips and peanut butter in the microwave. I started with 30 seconds, gave it a few stirs, then put it back in for another 30 seconds. At that point, the peanut butter will definitely be melted and the chips will have melted enough that a few more vigorous stirs will melt the rest.

Pour the chow mein noodles in a large bowl, then dump the melted butterscotch/peanut butter mixture into the noodles.

Gently stir the mixture until well combined. Then start forming your nests. This is the messy part! I used a spoon to scoop out some mixture, then used my fingers to form a circle with a slight depression in the middle.

Then, slide the nest off your spoon and onto a parchment paper-lined (or wax paper) cookie sheet. Once they’re on the sheet, you can move sticks around some more to make it look more like a nest if needed.

At this point, it’s time to add your eggs! I only put two eggs in per nest, but the candy I used were a little larger than most robin’s eggs you can buy at the store. You could probably fit three smaller eggs in these nests.

When your no bake cookie nests are filled, place them in the refrigerator to set. I would say to refrigerate at least 30 minutes to make sure your nests don’t fall apart when you serve them. I refrigerated overnight and the nests lasted the entire dinosaur themed party without making too much of a mess.Transform a classic Easter treat into a fun dinosaur party snack with these no bake eggs in a nest.
