Easy Gluten Free Cherry Pie Cups

Cherry pie is one of my favorite desserts! But it’s hard to enjoy a piece of classic cherry pie when you can’t eat gluten. Luckily, I’ve perfected my gluten free pie crust recipe! This easy recipe for gluten free cherry pie is simple and delicious.

Making gluten free pie crust takes a little bit of practice and patience. While I’m not going to get into the full scope of creating the best gluten free pie crust in this post. If you’re wondering how to make a great pie crust gluten free, check out my gluten free pumpkin pie recipe. In that post, I get into the nitty gritty of making a great gluten free pie crust from scratch!

This easy recipe for gluten free cherry pie uses the same crust as my gluten free pumpkin pie. But in this recipe, I make things a little bit easier by using a food processor to make the crust instead of a pastry blender.

How to Make Gluten Free Cherry Pie Crust

Make the gluten free pie crust using flour and butter.

To make these easy gluten free pie cups, you’ll need two components: the gluten free pie crust and cherry pie filling. My recipe makes the pie crust from scratch and uses a canned cherry pie filling.

The gluten free pie crust in this cherry pie recipe includes just a few simple ingredients:

To start making these delicious cherry pie cups, place the gluten free flour, butter, sugar, and salt in the bowl of a food processor. Pulse the ingredients until the pea-sized balls of dough begin to form.

Form the pie crust

When your crust ingredients are well combined, dump the dough into a large bowl and add your water one tablespoon at a time. After each addition, use your hands to work the water into the dough. After a ball begins to form, separate it into two smaller balls. Flatten each dough ball and place it in a zip-top bag to chill for at least an hour.

Use a cookie cutter to cut the pie crust

When your dough has chilled, place it on a lightly floured surface and roll it out until it’s around 1/4 inch thin. Use a 3 1/2-inch round cookie cutter to cut out the dough for the bottom of the mini pies.

Form the cups with the pie crust

Place each circle in a muffin tin, pinching the dough together if it cracks. Push the dough down into the muffin tin to form a cup, repairing the dough as you work to form it into a cup.

Fill each cup with cherry pie filling

Fill each cup with cherry pie filling, leaving a small space at the top of each pie cup for the top crust.

To make the top crusts, roll out the second dough disk until it’s 1/4-inch thick. Use a 2 1/2-inch round cookie cutter to make the top crust. If you want to add little hearts to the tops of your pies, use a 1 1/2-inch heart cookie cutter to cut a heart out of the center. Otherwise, cut four small slits in the top of each pie to allow steam to vent.

Add top crust to gluten free cherry pie

Use a fork to seal the edges of each mini cherry pie. Then bake the pies for 25 to 30 minutes, until the crust is golden brown.

Should I blind-bake the gluten free pie crust?

You don’t need to blind bake the crust for this recipe for cherry pie. Luckily, the gluten free pie crust and cherry pie filling bake at the same rate, so there’s no need to pre-bake your pie crust before putting pouring in the cherry filling.

Can I use this recipe to make a full-sized gluten free cherry pie?

Is cherry pie filling gluten free?

I think most canned cherry pie fillings are gluten free because they use corn starch to thicken the syrup. I used Comstock Cherry Pie filling, which is gluten free. Always check the ingredients on the can before using the pie filling in your own recipe.

Can I use a premade pie crust for this recipe?

Sure! If you have a favorite pre-made gluten free pie crust, you can definitely use it! It will make this recipe much easier. Just skip the crust-making steps and go straight to the directions for putting your gluten free cherry pies together.

This easy recipe for gluten free cherry pie includes a delicious, flaky pie crust filled with sweet cherry filling.

Ingredients

  • 1 ¼ cup gluten free baking flour
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter cubed and chilled
  • ¼ cup plus two tablespoons ice cold water
  • 1 21-ounce can cherry pie filling

Instructions

  1. In a large bowl, combine the gluten free baking flour, sugar, and salt. Whisk until mixed.
  2. Pour the flour mixture into the bowl a food processor and add the chilled butter. Pulse the food processor until pea-sized pieces of dough begin to form.
  3. Pour the dough back into the large bowl and slowly add water one tablespoon at a time. Stir between each addition. Continue adding water until dough begins to form into a loose ball.
  4. Turn out into a lightly floured surface and work into a ball with your hands. Form dough into a disk, wrap in plastic wrap, and chill in refrigerator at least one hour or up to overnight.
  5. When ready to fill crust with filling, preheat the oven to 425 degrees.
  6. Place chilled dough onto a lightly floured surface. Roll dough into until it’s around ¼ inch thick. Use a 3 ½ inch round cookie cutter to cut out the bottom crust of the mini pies. Carefully push the crust into each cup of a muffin pan.
  7. Roll out the second crust and use a 2 ½ inch round cookie cutter to cut out the top pie crust. Cut slits in the top of the crust or use a 1 ½ inch heart cookie cutter to cut a small hole in the top crust.
  8. Fill each mini pie with cherry pie filling, then place a top crust on top. Use a fork to seal the edges.
  9. Bake in the preheated oven for 25 to 30 minutes, until the crust is golden brown. Allow to cool completely before removing from pan and serving.

Notes

To make these mini gluten free cherry pies, you'll also need a 3 1/2 inch round cookie cutter, 2 1/2 inch round cookie cutter, and 1 1/2 inch heart cookie cutter.
