This easy egg and sausage scramble has everything you need in a delicious and heart breakfast all in one pan. That means you can quickly toss all the ingredients together and cook it quickly — making it perfect for a busy school day morning or even as a great Christmas breakfast recipe!
The combination of hash browns, eggs, sausage, and cheese is so delicious! And I’m sure even the pickiest eaters in your family will love it!
How to Make an Egg and Sausage Scramble
To make this recipe, start by browning your breakfast sausage. I chose mild pork sausage for our breakfast scramble because my kids were both eating it, but I bet hot sausage would taste amazing, too!
When your sausage is thoroughly cooked, remove it from the pan and place it on a paper towel-covered plate to drain. But try not to remove all the grease from the pan. Instead, use that flavorful sausage grease to fry your hash browns. For this yummy Christmas breakfast recipe, I used frozen diced potatoes with bell peppers to add a little color and flavor to the dish — perfect for Christmas morning!
While your potatoes are frying, take a few minutes to mix your eggs with the milk to ensure they’re nice and fluffy. Make sure all the yolks are broken and the eggs are well combined with the milk before adding it to the skillet.
Before adding the eggs to the skillet, first mix in the cooked sausage. Stir it up to make sure it’s well blended with the cooked potatoes.
When your sausage and potatoes are nice and mixed, add the egg and milk mixture to the pan. Continue stirring all the ingredients together until the eggs begin to scramble. Keep stirring until all the eggs are cooked and the ingredients are well combined.
The least step of this recipe is the most important, in my opinion — add the cheese. This ooey, gooey cheese will complete the meal and meld all the ingredients of your egg and sausage scramble into one delicious Christmas breakfast recipe!
Christmas Breakfast Recipe Variations
This easy egg and sausage scramble was so good as-is, but there are ways you could change the recipe to suit your tastes. Here are a few simple variations you could make to this Christmas breakfast recipe:
Use Different Meat
Whether your family isn’t a fan of sausage or you just want to add a different flavor to the dish, there are a variety of different meat options you could use:
- Bacon
- Bacon and sausage
- Churizo
- Turkey sausage
- Turkey bacon
Use Different Potatoes
I love the flavor that these diced potatoes with bell peppers had in this dish, but there are a few other ways you could make this egg and sausage scramble using different styles of potatoes. Here are some different potato options to consider:
- Shredded hash browns
- Diced potatoes with no peppers
- Fried potato slices

Make it Low Carb
While my family loved the addition of potatoes to this dish, this egg and sausage scramble doesn’t work if you don’t eat carbs! Luckily, you can easily make this recipe low carb by leaving out the potatoes all together. You could even add more meat to the dish to fill it out. I bet it would taste amazing with some bacon added to the mix!
