How to Make an Egg and Sausage Scramble

To make this recipe, start by browning your breakfast sausage. I chose mild pork sausage for our breakfast scramble because my kids were both eating it, but I bet hot sausage would taste amazing, too!

Fry potatoes in Christmas breakfast recipe

When your sausage is thoroughly cooked, remove it from the pan and place it on a paper towel-covered plate to drain. But try not to remove all the grease from the pan. Instead, use that flavorful sausage grease to fry your hash browns. For this yummy Christmas breakfast recipe, I used frozen diced potatoes with bell peppers to add a little color and flavor to the dish — perfect for Christmas morning!

Mix the eggs for the egg and sausage scramble

While your potatoes are frying, take a few minutes to mix your eggs with the milk to ensure they’re nice and fluffy. Make sure all the yolks are broken and the eggs are well combined with the milk before adding it to the skillet.

Whether your family isn’t a fan of sausage or you just want to add a different flavor to the dish, there are a variety of different meat options you could use:

  • Bacon
  • Bacon and sausage
  • Churizo
  • Turkey sausage
  • Turkey bacon

Use Different Potatoes

I love the flavor that these diced potatoes with bell peppers had in this dish, but there are a few other ways you could make this egg and sausage scramble using different styles of potatoes. Here are some different potato options to consider:

  • Shredded hash browns
  • Diced potatoes with no peppers
  • Fried potato slices
  • Diced sweet potatoes

Make it Low Carb

While my family loved the addition of potatoes to this dish, this egg and sausage scramble doesn’t work if you don’t eat carbs! Luckily, you can easily make this recipe low carb by leaving out the potatoes all together. You could even add more meat to the dish to fill it out. I bet it would taste amazing with some bacon added to the mix!

Egg and Sausage Scramble

Yield: 5 servings

Cook Time: 20 minutes
Total Time: 25 minutes

This easy egg and sausage skillet is perfect for a busy weekday breakfast or even as a Christmas breakfast recipe.

Ingredients

  • 1 pound breakfast sausage
  • 1 package frozen diced potatoes
  • 1 package frozen diced peppers and onions
  • Ā½ cup milk
  • 5 large eggs
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the sausage in a large skillet. Remove cooked sausage from skillet and set aside.
  2. Using the grease from the sausage, brown the diced potatoes, peppers, and onions. Continue cooking until all the potatoes are cooked through.
  3. Put sausage back into the skillet and stir until combined.
  4. In a large mixing cup, whisk together milk and eggs. Pour egg mixture into skillet and cook over medium heat, stirring continuously.
  5. When eggs are cooked, add in ½ cup of cheese and stir to combine. Remove skillet from heat and sprinkle remaining cheese over the top of the scramble.
  6. Allow cheese to melt before serving.
