To make this easy patriotic cake recipe, you’ll need just a few simple ingredients. But the best part about this easy red, white, and blue treat is that you don’t need any special skills to make it!

What I love about this poke cake recipe is how simple it is to make. All you have to do is add some Jello to a white cake and top it with fruit!

To prepare your own berry poke cake, you’ll need:

  • White cake: I used a white cake mix to make this simple recipe and prepared it in a 9×13 baking dish. You can make your white cake from scratch or even purchase a store-bought cake and remove the icing!
  • Red and blue gelatin. To give the cake a patriotic look, I used strawberry and berry blue Jell-o. You can use your favorite red and blue flavors to make your own cake, including raspberry, cherry, blue raspberry, or even Sonic Ocean Water and Cherry Limeade!
  • Fresh strawberries and blueberries: Give your desserts a patriotic look with the help of fresh berries. You can use any mix of berries you want, but I love the combination of red strawberries and blueberries for the 4th of July.
  • Frozen whipped topping: The last element you’ll need for this cake recipe is whipped topping. You can also use whipped cream for this layer of the dessert, but I prefer whipped topping because it’s a little more stable. That means the cream will stay creamy longer, making it a great choice for a party.

How to Make a Jell-o Poke Cake

A poke cake is typically made by poking holes into a prepared cake, then adding a filling to the holes. With this cake, we’ll be filling the holes with Jello!

But before you can start adding your gelatin, you’ll need to prepare your cake. If you’re using a boxed mix or homemade recipe, follow the instructions for baking the cake in a 9×13 baking pan.

When the cake is fully baked, allow it to cool completely. After that, use a wooden skewer or fork to poke holes all over the cake.

After that, prepare the Jello. But don’t follow the instructions on the box to make this gelatin packet! We’re not going to be using as much water as we would to prepare regular Jello. This will give the colors and flavors more pop in your dessert.

To make the gelatin for your poke cake, combine 1/2 cup boiling water with the red Jell-o package. Stir until all the powder is dissolved, then mix in 1/2 cup cold water. Stir to mix the water into the red gelatin.

While the gelatin is still liquid, drizzle it over the cake, making sure to get the gelatin into the holes you’ve poked.

Since you’ll be using two different colors, don’t pour all the red gelatin over the entire cake! Instead, drizzle it around the cake, leaving space to add the blue Jello later.

Next, prepare the blue Jello by mixing 1/2 cup boiling water with the powder until it’s dissolved. Then, stir in 1/2 cup cold water.

Drizzle the blue Jello all over the open areas of the cake, making sure to get plenty of the liquid into the holes. It’s okay if the colors overlap a little bit!

Once both the flavors have been added to the cake, cover the pan and place it in the refrigerator to chill for at least one hour. You can keep the cake refrigerated for up to 12 hours in the fridge before serving it.

When you’re ready to serve the cake, remove it from the fridge and spread the whipped topping all over the top in an even layer.

Then, top the cake with fresh berries to decorate. You can spread the berries out in an even layer all over the cake. Or arrange them in neat little piles on top of each piece before you cut it!

Make it gluten free. It’s easy to turn this into a gluten free dessert! Just prepare a gluten free white cake, then follow the instructions in the recipe. There are a few different cake mix options you can choose from when it comes to gluten free baking, but my favorite is Kinnikinnick Cake Mix. All the other ingredients in this recipe are naturally gluten free!

Decorate with different toppings. In addition to fresh berries, there are a few other fun toppings you can use to decorate your poke cake. Try adding patriotic sprinkles to the top of your cake. Or drizzle some strawberry syrup over the top of the whipped topping before serving.

Use homemade whipped cream. If you’re not a fan of whipped topping, you can also top your cake with fresh whipped cream. Whip together 2 cups of heavy whipping cream with 2 tablespoons of sugar until stiff peaks form, then spread the whipped cream over the top of the cake before serving.

How Do You Store Poke Cake?

This delicious cake is sure to be a hit at your party! But if you have leftovers, they should be stored in the refrigerator. Cover the pan with plastic wrap or transfer the extra pieces to an airtight container. The cake will stay good for up to three days.

Can I Make Poke Cake Ahead of Time?

Yes! This simple dessert is perfect for making in advance. You can prepare the cake and add the gelatin up to 1 day in advance. It’s a good idea to wait until you’re ready to serve your poke cake before adding the whipped topping and fresh berries to the top.

  5. Spoon the blue Jell-o over the cake, filling in the empty space where there is no red Jell-o.
  6. Cover the cake and place in the refrigerator to chill for at least one hour or up to overnight.
  7. Spread the whipped topping in an even layer over the top of the cake and decorate with fresh strawberries and blueberries before serving.
