You’re going to love just how simple these fun swimming cupcakes are to make! That’s because there’s no special decorating skills needed.

When you’re searching for pool party cake ideas, cupcakes are the way to go! They’re quick and easy to make, and so much simpler to decorate than a full cake. To make these cute summer birthday cupcakes, you’ll need:

  • Cupcakes. I used a boxed cake mix to make the cupcakes, but you could also use store-bought cupcakes for this quick party idea.
  • Blue Jello. We used blue raspberry gelatin to make the swirls inside the cupcakes, but any flavor of blue Jello will work for your own treats.
  • Icing and blue food coloring. Use store bought icing or make your own from scratch, then add the blue food coloring to give the cupcakes the look of a swimming pool.
  • Bear graham crackers and candy. To create the decorations for the top of your cupcakes, grab some bear graham crackers. Teddy Grahams work great! You’ll also need some peach gummy rings and rainbow sour belts for decorating.

How to Decorate Pool Party Cupcakes

The key to making these easy pool cupcakes is decorating the inside and the top of the cupcakes for the full pool effect! Keep reading to see how to create your own adorable summer snacks.

Start by removing all your cupcakes from the pan and allowing them to cool completely. Then, use a wooden skewer to poke holes all over each cupcake.

Next, prepare the blue gelatin according to the package instructions. Mix the boiling water with the gelatin mix and blend until all the powder has dissolved. Then, add the cold water and mix again.

I would suggest placing the cupcakes in a casserole dish for the next step because it can get a little bit messy! Pour the Jello mix over the top of the cupcakes, making sure to get into each hole. Continue pouring the liquid over the top until all the cupcakes have been filled.

Then, place the cupcakes in the refrigerator to chill for at least one hour.

When you’re ready to start decorating add blue food coloring to your icing and blend until no streaks remain. Add more food coloring, as needed, until you reach your desired shade of blue.

I suggest using gel food coloring for the best results. Liquid food coloring could cause the icing to become too thin.

Once your cupcakes are ready to decorate, use a flat spatula to spread a thin layer of blue icing over the top of each cupcake. Then, press one bear into each cupcake to make it look like he’s swimming. After that, decorate half the cupcakes with a peach ring and place one bear in the center of the ring.

Place a sour belt on top of the remaining cupcakes and lay another bear on top. Use a small amount of icing on the bottom of the bear cookie to hold it in place, if needed.

Ingredients

  • 1 15.25 ounce box white cake mix, plus ingredients to prepare it
  • 1 3-ounce package blue gelatin (any flavor you prefer)
  • 1 ½ cups boiling water
  • 1 16-ounce container white icing
  • Blue food coloring
  • 44 bear graham crackers
  • 11 peach gummy rings
  • 11 rainbow sour belt bites

Instructions

  1. Prepare the white cake mix according to the instructions on the box and bake 22 cupcakes. Allow the cupcakes to cool completely, then use a wooden skewer to poke holes all over each cupcake.
  2. Whisk together the blue gelatin and boiling water until all the gelatin is dissolved. Place the cupcakes in a pan to catch the extra liquid, then spoon the prepared gelatin into the holes in the cupcakes. Place the cupcakes in the refrigerator to chill for at least one hour to give the gelatin time to set.
  3. After the cupcakes have chilled, beat together the white icing with three to four drops of blue food coloring. Continue mixing until the icing is your desired shade of blue and no white streaks appear.
  4. Spread the icing over the top of each cupcake, using your spatula to create waves in the icing.
  5. To decorate, place one bear graham in the center of each of the peach rings and place them on half the cupcakes.
  6. Then, place the rainbow sour belt on top of each of the remaining cupcakes. Spread a small amount of icing on the bottom of 11 bears and place them on top of the sour belts. Press the remaining bears into the top of each cupcake next to the bears on rafts.
