This quick and easy recipe is made of two parts — a no bake pumpkin cheesecake filling and a delicious homemade pumpkin spice granola.
Once you combine those two delicious layers together, you have an amazing fall dessert. And since this pumpkin cheesecake in a jar is an individual treat, it’s perfect for a party.
No Bake Pumpkin Cheesecake
Making no bake pumpkin cheesecake is so easy! And it’s a perfect fall mason jar dessert. That’s because you can easily layer it with different “crust” options to create a yummy autumn treat.

But the best part about this simple recipe is that you only need a handful of ingredients to prepare it. To make your own pumpkin cheesecake in a jar, you’ll need:
- Gluten free rolled oats. If you’re not concerned about your pumpkin desserts being gluten free, traditional oats are fine. But if you want to make sure your cheesecake is safe to eat for someone with a gluten intolerance, make sure to use oats that are labeled gluten free.
- Chopped pecans. You can add any type of nuts you want to your pumpkin spice granola layer. I love the combination of pumpkin and pecans.
- Canola oil. To prepare your granola, you’ll need oil. I like the neutral flavor of canola oil, but any fatty oil will work — including vegetable oil or coconut oil.
- Maple syrup. Sweeten the granola and help it stick together with maple syrup. The combination of syrup and pumpkin is so delicious.
- Pumpkin pie spice. You’ll need pumpkin pie spice to add flavor to both your granola and your pumpkin cheesecake, so make sure to have plenty of this spice blend on hand for this recipe.
- Cream cheese. I suggest using full-fat cream cheese when making no bake cheese cake. And don’t forget to give your cheese time to soften before you start blending your ingredients.
- Pumpkin puree. Add some fall flavor and color to your no bake cheesecake with the help of pumpkin puree. Make sure to use plain pumpkin and not pumpkin pie mix, which is made with added sugar and spices.
- Sugar. To sweeten your cheesecake filling, use granulated sugar in your cheescake filling.
- Frozen whipped topping. The final ingredient to add to your no bake cheesecake is whipped topping. To make it easier to stir all you cheesecake ingredients together, make sure to allow your whipped topping to thaw in the refrigerator before mixing it in.
In addition to the ingredients you’ll need to prepare the layers in your cheesecake jars, you’ll also need half pint jars to create these desserts. I love these clear glass jars for making mason jar desserts because they’re the perfect size for one person to eat.
How to Make No Bake Pumpkin Cheesecake
While there’s no need to bake the cheesecake filling, there is a little bit of baking involved in making this simple recipe. But the good news is that you can prepare your pumpkin spice granola ahead of time and make your no bake pumpkin cheesecake jars later without the need to turn on your oven again.

To make your pumpkin cheesecake parfaits, you’ll need to start by making your own homemade pumpkin spice granola. First, stir together the chopped pecans and rolled oats until the two ingredients are mixed well.

After that, combine the oil, maple syrup, and pumpkin spice in a small bowl. Stir the ingredients together until they’re well mixed.
Then, pour the syrup mixture over the top of the oats and stir until all the oats and nuts are fully coated.

Spread the mixture in an even layer over a large baking sheet lined with parchment paper. Bake the granola at 300 degrees for 20 to 30 minutes, until the oats are just beginning to get crispy but the coating is still slightly sticky.
Once the cook time is up, remove the pan from the oven and set it on top of a wire cooling rack to cool. As the granola cools, it will begin to harden and become crunchy. Make sure to allow the granola to cool completely before adding it to the cheesecake in your mason jars.

Once the pumpkin spice granola has had time to cool, you can start preparing your pumpkin cheesecake filling. First, beat together the pumpkin, sugar, pumpkin spice, and cream cheese until the mixture is smooth and creamy.

Fold in the whipped topping. Continue stirring until all the whipped topping is fully mixed into the cream cheese mixture.

Now that you have both pieces of your no bake cheesecake jars ready to go, it’s time to start layering! First, spoon a thin layer of granola on the bottom of each jar.

Then, top the granola with a thin layer of pumpkin cheesecake. You can either transfer the cheesecake mixture to a piping bag and pipe it into the jar. Or simply spoon the mixture into each jar on top of the granola.

Continue by adding another layer of granola on top of the cheesecake layer. Then finish with a layer of pumpkin cheesecake.
Once all the cheesecake is layered in the jar, place them in the refrigerator to chill for at least one hour before serving. The longer you let your cheesecake chill, the more flavor it will have. You can store your cheesecake jars in the fridge up to overnight before serving them.
