While this recipe is made with cake mix, it’s definitely not a cake! This peach dessert is made with a player of peaches topped with a flakey crust. And since the cake mix is baked on top of the filling, it’s more like a cobbler than a cake after it’s finished baking.

And while it doesn’t have the same texture as a cake, it’s still super delicious! But my favorite part about this gluten free party food recipe is that you only need a few ingredients to make it. To prepare your own gluten free peach cobbler with cake mix, you’ll need:

  • Sliced peaches in juice. Make sure your peaches are canned with juice and not heavy syrup. You’ll need the peach juice in the can to prepare the filling, so it’s important that you pick a variety that comes with juice.
  • Brown sugar
  • Cornstarch. To create a slurry to thicken your peach mixture, you’ll need to mix the cornstarch with 2 tablespoons of cold water.
  • Cinnamon
  • Gluten free yellow cake mix. You can also use gluten free white cake mix if you don’t have any yellow cake mix on hand.
  • Butter. I use unsalted butter when baking, but I think this recipe could also work with salted butter if that’s all you have.

How to Make Gluten Free Peach Cobbler with Cake Mix

You only need a few minutes of prep work to make this quick and easy peach cobbler dump cake, which means it’s perfect for your next party! Just layer the ingredients and pop it in the oven for a flavorful sweet treat that’s sure to be a hit.

The first step to making your GF peach cobbler is to separate the peaches from the juice. Place a strainer over the top of a bowl and pour the can of peaches into the strainer. Allow the juice to drain into the bowl, then transfer your peaches to a 9×13 baking dish.

You can leave the peaches in their full slices if you want. But I prefer to have smaller, bite-sized peaches in my cobbler. I just used a knife to cut each slice into thirds directly in the pan.

After your peaches are ready to go, set your pan aside for a minute while you prepare the filling and topping ingredients.

Next, grab the bowl with your peach juice in it and add the brown sugar, cinnamon, and cornstarch slurry (made by combining the cornstarch with cold water). Stir until all the ingredients are well combined.

Then, pour the mixture over the top of your peaches. Lightly press the peaches into the juice until they’re ally fully covered and evenly dispersed throughout the pan.

In a separate bowl, combine the gluten free yellow cake mix and melted butter. Stir the two ingredients together until the cake mix starts to clump up. Continue stirring until all the mix is slightly clumpy and resembles coarse sand.

Sprinkle the cake mixture over the top of the peaches, making sure to spread it evenly across the entire pan. Once you have all the cake mix added to the top, you can lightly press it into the peaches. Just make sure not to completely submerge it in the juice!

After that, all that’s left to do is pop the cobbler in the oven and allow it to bake for around 60 minutes. You’ll know your cobber is finished baking when the filling is bubbly and the crust on top is golden brown. Then, allow the peach cobbler to rest at room temperature for around 30 minutes to give the filling time to cool and thicken.

Simply replace the gluten free cake mix with regular white or yellow cake mix and follow the recipe as written.
  • Try it with peach pie filling. To speed up the prep work on your peach cobbler, you can also use peach pie filling in place of the peach filling outlined in the recipe. While most pie filling is prepared with cornstarch, making it gluten free, it’s always a good idea to check the label before adding it to your dessert. You’ll need two cans of peach pie filling to prepare this cobbler recipe.

Ingredients

  • 2 15 ounce cans sliced peaches in juice
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water
  • 1 teaspoon cinnamon
  • 1 box gluten free yellow cake mix
  • 1/2 cup butter, melted

Instructions

    1. Preheat the oven to 350 degrees.
    2. Strain the juice from both cans of peaches into a bowl. Whisk the juice with the brown sugar, cornstarch mixture, and cinnamon. Set aside.
    3. In a separate bowl, stir together the gluten free cake mix and butter until the mixture begins to stick together.
    4. Spread the sliced peaches evenly in the bottom of a 9x13 baking dish. Cut the peaches into bite-sized pieces, if desired.
    5. Pour the peach juice mixture over the top of the peaches in the pan.
    6. Sprinkle the cake mix mixture over the top of the peaches and juice in an even layer.
    7. Bake 50 to 60 minutes, until the crust is golden brown and the filling is bubbly. Allow to rest for around 30 minutes before slicing and serving.

    This was delicious! The house smelled amazing while it was cooking. Thank you for this recipe. I am gluten sensitive, but I eat mostly gluten free because I never know what will cause me to be affected. I rarely eat cake, but I bought a mix on a whim a while ago and I’m glad I did.
    The only change I made was to add more cinnamon because I like it (I didnt measure, but it was probably close to 2-3 teaspoons) and a tiny bit of nutmeg.
    This is going to be served to guests as well as family. Can it be frozen for future use?

    1. I haven’t tried freezing this dessert before, so I’m not sure how it would do in the freezer. I think most of the ingredients are freezer-friendly, so it should be fine! Let me know how it turns out if you try to freeze it and reheat it!
