These easy gluten free pumpkin oatmeal cookies are a quick way to get your pumpkin fix. And they’re made with simple gluten free ingredients, which means they’re sure to taste amazing! These easy fall treats are great gluten free cookies for any autumn get-together.

This easy recipe for gluten free pumpkin oatmeal cookies uses just a handful of common ingredients! There’s no need to make your own gluten free flour blend or even create oat flour. All you have to do is open your pantry and pull out a few simple ingredient to create your own delicious gluten free dessert in no time.

Gluten Free Pumpkin Oatmeal Cookies Recipe

To make these easy gluten free pumpkin oatmeal cookies, you’ll need just a few simple ingredients — the most important being gluten free oatmeal and pumpkin puree. Always make sure to check our oatmeal package to ensure it’s gluten free because not all oats are gluten free!

To make these easy gluten free pumpkin oatmeal cookies, you’ll need:

  • Gluten free baking flour (I love Bob’s Red Mill 1-to-1 Baking Flour)
  • Pumpkin pie spice
  • Cinnamon
  • Baking soda
  • Salt
  • Butter
  • Brown sugar
  • Egg
  • Vanilla
  • Pumpkin puree
  • Gluten free quick cooking oats

The first step to making your gluten free pumpkin oatmeal cookies is to mix together the dry ingredients. Add your gluten free baking flour, pumpkin pie spice, cinnamon, baking soda, and salt in a large bowl. Whisk the ingredients together until they’re well combined, then set the bowl aside for a few minutes.

Next, grab your softened butter and brown sugar. Use a hand mixer or stand mixer to cream the ingredients together until they’re light and fluffy. The best way to ensure you get the right consistency when creaming your butter and sugar is to use room temperature butter. Set the stick of butter on the counter around 30 minutes before you plan to start baking and it will be ready to cream when you’re ready to bake! Otherwise, you can soften your butter in the microwave — just be careful not to overheat the butter and melt it.

Add the eggs, pumpkin puree, and vanilla extract and beat the ingredients to combine. To keep your cookie dough from becoming too wet, scoop the pumpkin puree onto a paper towel-lined plate. Cover the pumpkin with another paper towel and allow the pumpkin to rest for a few minutes while you blend the dry ingredients together. This will help soak up some of the excess liquid in the puree and keep your dough from becoming sticky.

Then, grab your dry ingredients and add them to the bowl. Beat all the ingredients together until you get a smooth batter.

Finally, add your gluten free quick cooking oats to the batter and fold them in until they’re just combined. Can’t find gluten free quick cooking oats? I use Quaker gluten free oats which is usually found in the cereal aisle next to the other oat options. I have also found gluten free oats at Aldi, but their selection isn’t very reliable.

If you’re unable to find quick cooking gluten free oats, you can make your own. Just add traditional old fashioned oats to your blender and pulse them a few times until they resemble quick cooking oats.

Easy Gluten Free Pumpkin Treat

After you add your oats to the batter, cover the bowl and put the dough into the refrigerator to chill for around 30 minutes. This will help your cookies retain their shape as they cook and keep them from spreading too much as they bake.

When you’re ready to start baking your cookies, preheat the oven and line a baking sheet with parchment paper. Use a tablespoon to scoop heaping spoonfuls of dough, then roll each scoop into a ball with your hands. Place the balls on the baking sheet, then press the top of each ball down with your hand to form a disk.

Bake the cookies in the preheated oven for 10 to 12 minutes. You’ll know the cookies are done when the edges are golden brown and the tops are set. Remove the baked cookies from the oven and allow them to cool on the baking sheet for around five minutes, then transfer them to a wire cooling rack to cool completely.

Tips for Pumpkin Oatmeal Cookies

Can I use old fashioned oats in this recipe?

If you can’t find quick cooking gluten free oats, you can use old fashioned oats instead. If you keep the old fashioned oats as-is, the texture of the cookies will be slightly different, but I’m sure they’ll taste great. Or you can turn your old fashioned oats into quick cooking oats by placing them in the blender. Use the same amount of old fashioned oats as you would quick cooking oats. Pour the oats in the blender and two or three times until the oats resemble the correct consistency.

Are oats gluten free?

While it may seem like oats would be gluten free, most varieites of oats are not gluten free — unless the package specifically states that they’re gluten free. During processing most oats are rolled in flour, making traditional oats unsafe for anyone with a gluten intolerance. When shopping for oats, always check the package to ensure the oats you’re using are labeled as gluten free. There are several oat brands that make gluten free oats, including:

  • Quaker
  • Nature’s Path
  • Live GFree (Aldi’s gluten free brand)
  • Bob’s Red Mill
  • Arrowhead Mills
  • Udi’s

Can I add chocolate chips?

Sure! I love the flavor combination of chocolate and pumpkin, so I think chocolate chips would be a great addition to these cookies. Just add them to the cookie dough at the same time you add the oats!

  • 1 cup gluten free baking flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/3 cup pumpkin puree, moisture removed with a paper towel
  • 1 1/2 cups quick cooking gluten free oats

Instructions

  1. In a large bowl, combine the flour, pumpkin pie spice, cinnamon, baking soda, and salt. Whisk until well combined and set aside.
  2. In a separate bowl, cream together the butter and brown sugar until smooth and fluffy. Add the egg, vanilla extract, and pumpkin puree and beat until combined.
  3. Add the dry ingredients and mix until combined.
  4. Fold in the gluten free oats until just combined.
  5. Cover the bowl and chill the dough for 30 minutes, then preheat the oven to 350 degrees when ready to bake.
  6. Use a tablespoon to scoop out the dough. Roll the dough into balls and place it on a baking sheet lined with parchment paper. Press down the tops of the cookies, then place the baking sheet in the oven and bake for 10 to 12 minutes. The cookies are done with the edges are slightly brown and the center of the cookie is set. Allow the cookies to rest on the baking sheet for five minutes, then transfer to a wire cooling rack to cool completely.

Notes

To keep your cookie dough from becoming too wet, scoop the pumpkin puree onto a paper towel-lined plate. Cover the pumpkin with another paper towel and allow the pumpkin to rest for a few minutes while you blend the dry ingredients together.
