  1. Scrub the potato clean and dry the skin completely.
  2. Rub the skin with olive oil and season with salt.
  3. Pierce the potato with a fork on the top and bottom.
  4. Preheat the oven to 400 degrees and place the potatoes directly on the oven rack.
  5. Bake for 45 minutes, flipping the potato halfway through.
Top with butter and cheese

After your potato is baked through, it’s time to start stuffing! First, season the potato with salt and parsley, then add some butter. Stir the ingredients together inside the skin, being careful not to pierce the skin as you mix.

When the butter has been mixed well into the potato, top with with cheese.

Make the BBQ turkey

The best part about this stuffed baked potato recipe is that it’s stuffed with BBQ turkey! To make my BBQ turkey, I simply reheated leftover turkey with some BBQ sauce in a pan. But I bet this recipe would taste even more amazing with smoked BBQ turkey!

Stuff with BBQ turkey

When the turkey is warmed up and the sauce has begun to bubble, remove it from the pan and top your baked potatoes with the meat. Make sure you really stuff your potato with the delicious turkey to make it a full meal all in one delicious container.

Ingredients

  • 2 large potatoes
  • 8 ounces turkey, shredded
  • ½ cup BBQ sauce
  • 2 tablespoons butter
  • 1 teaspoon parsley flakes
  • 1 teaspoon salt
  • 1 cup shredded cheddar jack cheese
  • Chopped green onion and sour cream for garnish (optional)

Instructions

  1. Preheat oven to 400 degrees.
  2. Brush potatoes with olive oil and season with salt. Place in preheated oven and bake for 35 to 45 minutes.
  3. When potatoes are finished baking, place turkey and BBQ sauce in a small skillet. Stir to combine and cook until warm. Remove from heat and set aside.
  4. Cut a slit in the top of the potatoes and use a fork to smash the inside of the potato. Add butter, parsley flakes, and salt. Stir to combine.
  5. Top potato with shredded cheese.
  6. Top cheese with BBQ turkey.
  7. Garnish with green onion and sour cream.
