  • Butter. Cookies need fat, which means you’ll need to mix some softened butter into the cookie dough. I suggest using full-fat, unsalted butter for the best flavor and consistency.
  • Pumpkin puree. Add pumpkin flavor to your cookies with the help of canned pumpkin. Make sure you’re using plain pumpkin puree and not pumpkin pie mix, which is made with added sugar and spcies.

This recipe couldn’t be easier to make since you start with premade cake mix! Just follow these quick and easy instructions to make your own gluten free pumpkin cookies with cake mix.

Gluten Free Cake Mix Cookies With Cream Cheese

Start by combining the butter, cream cheese, and pumpkin in a large bowl. To ensure your cookie dough is smooth and easy to mix, always start with softened cream cheese and softened butter.

The best way to soften your cream cheese and butter is to let both ingredients sit at room temperature for around one hour before you start baking. But if you don’t have time to wait an hour for your ingredients to soften, you can place both ingredients in the microwave for 10 to 20 seconds to soften them more quickly.

Once your ingredients are softened, use a stand mixer or hand mixer to beat the ingredients together until they’re smooth and well combined.

After that, add the cake mix and pumpkin pie spice to the bowl. Beat the dry ingredients into the pumpkin mixture until you have a smooth, thick dough.

Use a tablespoon or small cookie scoop to scoop the dough out of the bowl. Roll each scoop between your hands to make a small ball.

Place each dough ball on a baking sheet lined with parchment paper. While these cookies don’t spread much, make sure not to overcrowd the pan as you’re placing your cookies on top.

Instructions
