Gluten Free Pumpkin Bread
The key to getting the perfect consistency in your gluten free pumpkin bread is to change up the cake mix recipe slightly. With a few tweaks, you can turn sweet cake into a delicious bread!

Since this bread recipe is made with cake mix, you only need a few simple ingredients to prepare it. To make your own pumpkin bread, you’ll need:
- Pumpkin puree. Add pumpkin flavor to your quick bread with the help of canned pumpkin. Make sure you’re using plain pumpkin puree and not pumpkin pie mix, which is made with added sugar and spices.
- Eggs. When using a cake mix, eggs are essential! You’ll need two eggs to make this easy recipe.
- Gluten free yellow cake mix. While you can use white or yellow cake mix in this pumpkin bread recipe, I like the flavor the yellow cake mix adds to the batter. Keep reading to see what my favorite gluten free cake mixes are!
- Pumpkin pie spice and cinnamon. The key to getting that classic pumpkin flavor is to use a combination of pumpkin pie spice and ground cinnamon.
What is the best gluten free yellow cake mix?
No matter what you’re baking, finding the best gluten free cake mix is a must. That’s why I’ve tested a few different brands to figure out which option is the best. When it comes to gluten free yellow cake mix, my favorite is King Arthur Gluten Free Yellow Cake mix!
How to Make Gluten Free Pumpkin Bread with Cake Mix
This recipe couldn’t be easier to make since you start with premade cake mix! Just follow these quick and easy instructions to make your own gluten free pumpkin bread with cake mix.

Start by combining the pumpkin puree, eggs, pumpkin pie spice, and cinnamon. Whisk the ingredients together until everything is smooth and well combined.

After that, add the cake mix to the bowl and stir to mix. Continue stirring until the cake mix is just incorporated into the pumpkin mixture. Make sure not to over mix the batter or the bread will become too dense.

Then, place a piece of parchment paper in the center of your loaf pan, letting the ends of the paper hang over the edges. This sling will make it easy to remove the loaf after your bread is finished baking. After that, spray the sides with nonstick cooking spray.
Then, pour the batter into the prepared pan and bake the bread for 55 to 65 minutes. You’ll know your pumpkin loaf is finished baking when a toothpick inserted into the center of the cake comes out clean.
Allow the loaf to cool in the pan for 5 to 10 minutes, then use the parchment paper to pull it out of the pan. Place the bread on a cooling rack to cool completely before slicing.

And since this recipe is so easy to make, it’s simple to adjust to suit your needs. Try using these recipe adjustments and additions to make a delicious fall dessert for any celebration:
- Use regular cake mix. If you don’t need your pumpkin bread to be gluten free, you can substitute regular yellow cake mix in this recipe. The measurements for all the other ingredients will remain the same.
- Add some icing or glaze. Want to add a touch of sweetness to your pumpkin bread? Top it with some icing or a quick glaze. You can use gluten free cream cheese icing to spread over the top of the loaf. Or mix one cup of powdered sugar with 2 to 3 tablespoons of milk to make a quick glaze to top your loaf.
- Add some mix-ins. Try mixing in a few other ingredients to give your pumpkin bread even more flavor. Chocolate chips, chopped pecans, walnuts, raisins, or white chocolate chips would all make great additions to this easy recipe.
Can I Substitute Flour for Cake Mix in Pumpkin Bread?
Since cake mix is made with a combination of ingredients, including flour and sugar, it doesn’t make a good substitute for flour in a cookie recipe. But that doesn’t mean you can’t make bread with cake mix! You just have to adjust the other ingredients in the recipe to account for the other ingredients that are already found in the cake mix.
How Do I Store Gluten Free Pumpkin Bread?
Once you’ve allowed your pumpkin bread to cool completely, you can cover it with plastic wrap or transfer it to an airtight container for storage. Keep it in a cool, dry place at room temperature. The bread will stay good for up to 4 days.
