Pillsbury Gluten Free Cake Mix Cookies

The key to making these easy cookies is cake mix. And if you want them to look amazing, I suggest using Pillsbury gluten free funfetti cake mix as the base. The cookies will look so cute when you’re finished baking them.

To make these easy gluten free cake mix cookies, you’ll need:

  • Gluten free cake mix: I used gluten free Pillsbury cake mix for these cookies, but King Arthur cake mix would also be delicious. You can also use any flavor to make these easy cookies! Just swap the cake mix and follow the recipe as written, no matter what flavor or brand you pick.
  • Vegetable oil: While you’ll be using cake mix for these cookies, ignore the directions on the back of the box. Instead, scroll down to get the correct measurements in my recipe at the bottom of the page.
  • Eggs: Again, don’t reference the box when preparing your cookie dough. Use the measurements suggested in my recipe to get perfect cake mix cookies.
  • Mini M&Ms: These are an optional add-in, but they taste amazing in your cookies! And they add another pop of color to accent the funfetti cake mix.

That’s it! With these four ingredients, you can have a delicious and pretty cookie to enjoy for a snack or a birthday party.

How to Make Cake Mix Cookies

Making cake mix cookies is so easy! In fact, you just need to follow three simple steps to make these quick and simple cookies:

  1. Beat together the cake mix, oil, and eggs. Combine the ingredients until a thick dough begins to form. Your mixer may not be able to fully mix the ingredients, so when the dough becomes too thick, just use a spoon to continue stirring.
  2. Add the M&Ms. If you’ll be adding candy to your cookies, stir the M&Ms in with a spooon.
  3. Bake the cookies. Use a cookie scoop or tablespoon to scoop out the cookie dough and bake on a parchment paper lined baking sheet.

If you have ever made cake mix cookies using traditional cake mix, you’ll need to think twice about the bake time. Gluten free cookies typically need a little longer in the oven, so these cookies will need to be baked for 10 to 15 minutes.

When the cookies are finished baking, allow them to cool on the pan for around five minutes, then transfer them to a wire cooling rack to cool completely before serving.

Cake Mix Cookie Variations

These delicious cookies are so quick and easy to make. But the best part about gluten free cake mix cookies is that you can make variations to the recipe.

These simple recipe variations are a great way to change up the recipe to create different flavors for different occasions. Since there are a limited number of gluten free cake mix flavors available, you’ll have two different cake mix options, in addition to funfetti:

Instead of funfetti cake mix, use chocolate cake mix to make your cookies. And with chocolate mix, you can use a variety of different add-in ingredients to enhance your cookies, like:

  • Toffee bits
  • Chocolate chips
  • Chopped up candy bars
  • Mint and peppermint pieces
  • Caramel pieces

    2. Can you sub applesauce for the oil? I have in many baking recipes and makes lower cal.

  2. Anne Marie Charvat says:

Hi there. Love making these but my daughter cannot have the m&m’s because the candy coating isn’t GF. She has celiacs. Just thought I’d add that. Thanks for sharing!

    1. Thanks for the info, Anne! I had no idea that some people had a reaction to M&Ms. I’ve never had any problems eating them! But you can easily substitute chocolate chips or white chocolate chips for the M&Ms in this recipe!

      1. Candace Tischer says:

I used dark chocolate chips. I pressed them into the cookie once I placed them on the cookie sheet before baking.

    2. M&Ms are most definitely Celiac safe. The only flavor that isn’t are the pretzel ones. The coating has no gluten whatsoever.

      1. I’m not Celiac, but have a severe gluten intolerance and plain M&Ms have always been safe for me to eat!

  3. These cookies were delicious. I could only get a Krusteaz chocolate cake mix which is a little larger at 18 oz, so I added an egg and 1 more tablespoon of oil. I used the mint baking pieces and they were really good. I can’t wait to try more baking combinations.

    1. That sounds delicious! I’ll have to try that version next time I make them!

  4. Would you be able to make this dough a day ahead of time and referigate until it’s time to bake?
    Thanks 🙂

    1. Yes! You may need to increase the cook time to account for the cold dough or let the dough come to room temperature before baking

  5. can you make snickerdoodles with these and if so do you need to add cream of tartar?

    1. I’ve never tried to make these as snickerdoodles, so I have no idea if it would work!
