- Butter
- Brown sugar
- Eggs
- Vanilla extract
- Gluten free baking flour (I love Bob’s Red Mill 1-to-1 Baking Flour)
- Cinnamon
- Nutmeg
- Baking soda
- Salt
- Dried cranberries
- Gluten free quick cooking oats

How to Make Gluten Free Cranberry Oatmeal Cookies
Since the base of these treats is a classic oatmeal cookie recipe made gluten free, it’s quick and easy to make! Just follow these simple instructions to whip up your own delicious oat cookies in no time.

The first step to making your gluten free oatmeal cookies is to beat your softened butter and brown sugar together. Use a hand mixer or stand mixer to cream the ingredients together until they’re light and fluffy. The best way to ensure you get the right consistency when creaming your butter and sugar is to use room temperature butter. Set the stick of butter on the counter around 30 minutes before you plan to start baking and it will be ready to cream when you’re ready to bake! Otherwise, you can soften your butter in the microwave — just be careful not to overheat the butter and melt it.

Add the eggs and vanilla extract and beat the ingredients to combine, making sure not to overmix the ingredients.

Then, grab your gluten free flour, cinnamon, nutmeg, salt, and baking soda. Beat the dry ingredients into the butter mixture until the dough is well mixed.

Finally, add your gluten free quick cooking oats and dried cranberries to the batter and fold them in until they’re just combined. Can’t find gluten free quick cooking oats? I use Quaker gluten free oats which is usually found in the cereal aisle next to the other oat options.
If you’re unable to find quick cooking gluten free oats, you can make your own. Just add traditional old fashioned oats to your blender and pulse them a few times until they resemble quick cooking oats.

After you add your oats and cranberries to the batter, line a baking sheet with parchment paper. Then, use a tablespoon to scoop heaping spoonfuls of dough, then roll each scoop into a ball with your hands. Place the balls on the baking sheet, then press the top of each ball down with your hand to form a disk. Add a few more cranberries to the top of each cookie to decorate.

Bake the cookies in the preheated oven for 10 to 12 minutes. You’ll know the cookies are done when the edges are golden brown and the tops are set. Remove the baked cookies from the oven and allow them to cool on the baking sheet for around five minutes, then transfer them to a wire cooling rack to cool completely.

Can I use old fashioned oats in this recipe?
If you can’t find quick cooking gluten free oats, you can use old fashioned oats instead. If you keep the old fashioned oats as-is, the texture of the cookies will be slightly different, but I’m sure they’ll taste great. Or you can turn your old fashioned oats into quick cooking oats by placing them in the blender. Use the same amount of old fashioned oats as you would quick cooking oats. Pour the oats in the blender and two or three times until the oats resemble the correct consistency.
Are oats gluten free?
While it may seem like oats would be gluten free, most varieties of oats are not gluten free — unless the package specifically states that they’re gluten free. During processing most oats are rolled in flour, making traditional oats unsafe for anyone with a gluten intolerance. When shopping for oats, always check the package to ensure the oats you’re using are labeled as gluten free. There are several oat brands that make gluten free oats, including:
- Quaker
- Nature’s Path
- Live GFree (Aldi’s gluten free brand)
- Bob’s Red Mill
- Arrowhead Mills
- Udi’s
- Great Value (Wal-Mart’s store brand)
Can I add chocolate chips?
Sure! I love the flavor combination of chocolate and oats, so I think chocolate chips would be a great addition to these cookies. Just add them to the cookie dough at the same time you add the oats!
How do you store cranberry oatmeal cookies?
To make sure your cookies stay fresh, it’s a good idea to transfer them to an airtight container and store them in a cool, dry place. They can be kept at room temperature for up to one week.

Gluten Free Cranberry Oatmeal Cookie Recipe

- 1/2 cup butter, softened
- 3/4 cup brown sugar
