Yummy Gluten Free Fried Chicken Recipe
I’ve been gluten free for more than two years now, and for the most part, I don’t miss the gluten-filled products I once enjoyed. But, being in my third trimester has brought about a few cravings for comfort food, including fried chicken. So I decided to whip up some gluten free fried chicken the other day.

I made the decision to go gluten free after suffering from severe migraines for several years. I had multiple tests done and no doctor could ever find a cause for my intense headaches, so I suffered through the pain for most of my life. After a particularly terrible migraine, I began doing a little research online and found that a symptom of gluten intolerance was migraines.
As I read further, I began to connect several other symptoms of intolerance to things I have dealt with throughout most of my life, including anxiety, depression, brain fog, acne, and fatigue. I decided to go two weeks without gluten to see if it relieved any of my symptoms.
Those two weeks were pretty brutal since I was withdrawing from the wheat and other glutens that filled my body for most of my life. But once the withdrawal symptoms went away, I felt great! No headaches, no anxiety. My skin cleared up. I had more energy.
At the end of my two week test, I went to my grandma’s to celebrate Easter, and sitting on the counter was her chocolate pie. Of course, I ate a piece. And I immediately regretted it. I spent the rest of the evening throwing up and experiencing one of the worst migraines I’ve ever had. I haven’t intentionally eaten gluten since that day.
So the past two years, I’ve spent time trying different gluten free recipes and products to see what is good and what isn’t. During that search, I found Hodgson Mills gluten free seasoned coating mix. If you plan on making fried anything — use this stuff. Even my gluten-loving husband and son said the chicken and gravy made with this mix tastes like the real thing!

To make this chicken fried chicken with gravy, I began by mixing one large egg with ⅓ cup of milk in one bowl and adding one cup of the seasoned coating mix in another.

As you’re completing the next few steps, heat one inch of oil in a pan over medium heat to make sure it’s super hot by the time you’re ready to start frying.

Then, I cut some boneless, skinless chicken breasts in half and pounded them flat with a meat mallet. This tenderizes the meat allows it to cook more quickly.

Next, take your chicken, dip it in the egg mixture, then in the coating mix. Repeat this step one more time to make sure your chicken is completely covered.Add your coated chicken into the hot oil and allow to fry for 10 minutes on each side. Then, remove the chicken to a plate covered with a paper towel to catch excess oil.

Now that you have gluten free fried chicken, it’s time to make the gravy! Remove all but two tablespoons of oil and drippings from your pan, then add two tablespoons of coating mix. Stir constantly until browned.

Finally, add two cups of milk to the roux and reduce heat to low. Heat until simmering, stirring constantly to avoid clumping. After the mixture starts simmering, remove from heat. The mixture will thicken upon standing.

Then pour your gravy over the gluten free fried chicken and enjoy!
